Monterey Chicken
This easy Monterey Chicken recipe is made with tender chicken breasts, tangy BBQ sauce, bacon and plenty of melty cheese.

- 4 small boneless skinless chicken breasts
- 1 tablespoon olive oil
- ½ teaspoon sea salt
- ½ teaspoon black pepper
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 2 tablespoons barbecue sauce
- 2 cups Monterey Jack cheese grated
- 2 slices bacon cooked and crumbled
- 1 small tomato diced
- 1 green onion sliced thin
Preheat oven to 375℉
Add olive oil to a baking dish
Use a meat mallet to lightly pound chicken to even thickness, and place chicken in baking dish,
season with salt, pepper, garlic and onion powders
Brush BBQ sauce evenly over chicken
Bake for 15 minutes
Add cheese and crumbled bacon on top of chicken, and bake for another 5-10 minutes or until cheese is melted, and chicken is 165℉, according to an instant read thermometer
Remove from oven, and sprinkle tomatoes and onion on top of chicken, and serve
Recipe made with chicken pounded to about 1/4-inch thick. Total cooking time depends upon how thick your chicken is. Test temperature before serving.
You can use salsa or pico de gallo in place of tomato and onion.
