- 1 pound mild Italian sausage links casings removed
- 16 ounces penne pasta
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 large garlic cloves minced
- 28 ounces crushed tomatoes
- ¼ cup vodka
- 1 teaspoon dried parsley
- 1 teaspoon sea salt
- ½ teaspoon ground black pepper
- ½ cup heavy cream
- fresh basil leaves
- ½ cup grated Parmesan cheese
Sauté garlic in butter and olive oil in Dutch oven or large skillet over medium heat until soft
Add sausage, and cook until no longer pink, crumbling up as it cooks
Cook pasta in a large pot of boiling salted water according to package directions, reserving 1 cup of pasta water. Drain (or add directly to pasta sauce when done.)
Stir in crushed tomatoes, sea salt, parsley and pepper, and heat until bubbling
Stir in vodka, and cook for 5 minutes
Reduce heat, and stir in heavy cream. Allow to simmer for 2-3 minutes
Add cooked pasta, and stir until well combined. Add a little reserved pasta water to thin sauce, if necessary
Garnish with fresh basil and Parmesan cheese. Serve immediately
You can either slice the sausage or remove sausage casings and cook crumbled sausage.
Safety tip -- If cooking on a gas stove, turn flame off while adding vodka. Once vodka is added, turn flame on.
