Pumpkin Bread French Toast

An easy pumpkin bread French toast recipe made with leftover pumpkin bread and 3 other simple ingredients. Perfect for fall breakfast or brunch.

Ingredients

  • 8 slices pumpkin bread not fresh
  • 2 large eggs
  • 1 cup heavy whipping cream
  • ½ teaspoon pumpkin pie spice

Instructions

  • Slice loaf of pumpkin bread into thick slices about ½ inch thick
  • Add eggs to a shallow dish, and whisk
  • Whisk in heavy cream and pumpkin pie spice until well blended
  • Heat a non-stick griddle over medium heat
  • Gently dip a slice of bread into the egg mixture, then quickly flip to coat the other side
  • Do not soak the bread
  • Cook the bread on the preheated griddle, flipping once or twice until both sides are golden brown
  • Repeat the process until all slices of pumpkin bread are used up

Notes

Use pumpkin bread that is a few days old or let it sit out before making for best results.
Don't let the bread soak in the egg mixture. Just quickly dip both sides until coated.
Keep warm on a baking sheet in the oven until all pieces are done.
