Ancho Chili Brownies

Ingredients

  • ½ cup butter
  • 2 cups semi-sweet chocolate chips divided
  • 1 teaspoon vanilla extract
  • 1.5 teaspoons ground cinnamon
  • 1.5 teaspoons ancho chili powder
  • 3 eggs
  • 1 cup granulated sugar
  • 1 ¼ cups all-purpose flour
  • ¼ teaspoon baking soda

Topping

  • 1 cup semi sweet chocolate chips
  • Red Hot Cinnamon Imperials
  • Valentine sprinkles

Instructions

  • Preheat oven to 350 degrees
  • In a heavy-duty sauce pan or microwaveable bowl, melt 1 cup of the chocolate chips and the butter over low heat, stirring frequently until chips are completely melted. If you're using the microwave method, heat chips in short increments, (according to package directions) and stir in between.
  • Remove from heat, allow to cool slightly, and stir in the vanilla extract, ancho chili powder and cinnamon. Then add the eggs, one at a time.
  • Add the sugar, flour, baking soda and cinnamon. Stir until completely blended.
  • Stir in the remaining chocolate chips
  • Spread brownie batter into a greased or parchment paper-lined 13 X 9-inch baking pan, and bake at 350 degrees for about 20 to 25 minutes, or until the edges are firm, center is set, and a toothpick comes out mostly clean. Do not over bake -- center will firm up as brownies cool
  • Pour 1 cup of semi sweet chocolate chips over the baked brownies and briefly return to the oven just until the morsels start to melt
  • Remove from oven, and gently spread morsels evenly over the brownies using a spatula
  • Sprinkle Red Hots and Valentine sprinkles over the chocolate glaze. Allow to cool completely before slicing

Notes

Do not substitute regular chili powder for the ancho chili powder as the flavor will not be the same.
