Cotija Corn Avocado TRISCUIT Crackers

An easy appetizer made with grilled corn, Cotija cheese crumbles and avocado slices over TRISCUIT crackers that's perfect for summer entertaining

  • 24 TRISCIUT crackers
  • 2 small avocados thinly sliced
  • 1 cup grilled corn
  • 1/2 cup Cotija cheese crumbled
  • 1/2 lime
  • Salt and pepper to taste
  • Cilantro for garnish optional


  • Slice the kernels off of an ear of grilled corn, season with salt and pepper, and set aside
  • Slice open avocados, scoop out onto a dish, squirt with lime juice, and slice thin
  • Arrange crackers on a serving dish
  • Add two small avocado slices to each cracker
  • Top each cracker with small amounts of corn and Cotija cheese
  • Garnish with chopped cilantro and fresh lime juice, if desired
