Ground Beef Vegetable Soup

Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion chopped
  • pounds lean ground beef
  • 2 garlic cloves chopped
  • 1 tsp sea salt
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • 3 medium Yukon gold potatoes cubed
  • 2 medium carrots chopped
  • 4 cups beef broth low sodium
  • 15 oz can diced tomatoes
  • 8 oz can tomato sauce
  • 1 tsp Worcestershire sauce
  • 2 cups green beans trimmed, cut

Instructions

  • In a large pot or Dutch oven, sauté the onion in olive oil over medium heat
  • Add the ground beef, and cook until no longer pink (drain if needed)
  • Add the garlic, sea salt, thyme, parsley and pepper, and cook until fragrant, about 1-2 minutes
  • Add the potatoes and carrots, then stir in the beef broth
  • Add the tomatoes, tomato sauce, Worcestershire sauce and green beans
  • Place lid on the soup pot, bring to a boil, then reduce heat to low or simmer, and cook for 20-25 minutes or until vegetables are fork tender, stirring occasionally

Notes

Garnish with fresh parsley or thyme before serving, if desired.
Substitute your favorite frozen veggies for fresh vegetables, if desired. You can use garlic powder and onion powder or dried minced onions in place of fresh.
