Fiesta Chicken Casserole Recipe

- 1 can cream of chicken soup
- 1 cup salsa thick
- ¼ cup sour cream
- 1 tbsp taco seasoning
- 1 cup instant rice parboiled rice
- 1 can black beans drained and rinsed
- 1 can sweet corn drained and rinsed
- 3 cups cooked chicken cubed
- 2 cups cheddar cheese shredded
Preheat oven to 375℉ and spray 9x13 baking dish with non stick cooking spray
In a large mixing bowl, add the soup, salsa, sour cream and taco seasoning, and mix well
Add the rice, beans, corn and cooked chicken, and stir until well combined
Spread the chicken mixture evenly in the prepared baking dish
Top with shredded cheese
Cover with aluminum foil, and bake for 25-30 minutes or until bubbly and cheese is melted
You can use any instant rice, like Minute rice or Uncle Ben's. Use 2 cups cooked rice in place of instant, but do not use uncooked long-grain rice.
Use chunky or thick salsa for best results. Or use a can of diced tomatoes and green chiles.
Spray underside of aluminum foil with cooking spray to prevent cheese from sticking to foil.
