Fiesta Chicken Casserole Recipe

Fiesta Chicken Casserole is an easy chicken casserole recipe with rice, rotisserie chicken, corn, black beans, salsa and lots of cheese. A delicious dinner the whole family loves!

Ingredients

  • 1 can cream of chicken soup
  • 1 cup salsa thick
  • ¼ cup sour cream
  • 1 tbsp taco seasoning
  • 1 cup instant rice parboiled rice
  • 1 can black beans drained and rinsed
  • 1 can sweet corn drained and rinsed
  • 3 cups cooked chicken cubed
  • 2 cups cheddar cheese shredded

Instructions

  • Preheat oven to 375℉ and spray 9x13 baking dish with non stick cooking spray
  • In a large mixing bowl, add the soup, salsa, sour cream and taco seasoning, and mix well
  • Add the rice, beans, corn and cooked chicken, and stir until well combined
  • Spread the chicken mixture evenly in the prepared baking dish
  • Top with shredded cheese
  • Cover with aluminum foil, and bake for 25-30 minutes or until bubbly and cheese is melted

Notes

You can use any instant rice, like Minute rice or Uncle Ben's. Use 2 cups cooked rice in place of instant, but do not use uncooked long-grain rice.
Use chunky or thick salsa for best results. Or use a can of diced tomatoes and green chiles.
Spray underside of aluminum foil with cooking spray to prevent cheese from sticking to foil.
