Biscoff Cookie Butter Bars

These easy cookie butter bars are made with creamy cookie butter, crispy Biscoff cookies and plenty of chocolate chips. They’re soft, chewy and a delicious treat anytime!

Ingredients

  • ½ cup butter
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar
  • 1 cup cookie butter spread
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon sea salt
  • 2 teaspoons ground cinnamon
  • cups semi sweet chocolate chips divided
  • 10 Biscoff cookies divided

Instructions

  • Preheat oven to 350℉ and line a 9x13 baking dish with parchment paper
  • Add butter to a large mixing bowl, and melt in the microwave
  • Add in the granulated sugar and light brown sugar, and mix with a rubber spatula until well combined
  • Stir in cookie butter and vanilla extract
  • Add eggs, and mix until fully combined
  • Gently mix in 1 cup flour, baking powder, sea salt and cinnamon until barely combined
  • Add in remaining 1 cup flour, and mix until just combined
  • Gently fold in 1 cup of chocolate chips and 7 crushed Biscoff cookies
  • Evenly spread mixture in prepared baking dish
  • Top with remaining ½ cup chocolate chips and 3 crushed Biscoff cookies
  • Bake for 20-25 minutes, or until dough no longer looks greasy and a toothpick inserted comes out clean
  • Remove from oven, and allow to cool slightly before removing from pan
  • Slice into squares, and store in an airtight container

Notes

Can use smooth or crunchy cookie butter spread.
Make sure cookie butter is at room temperature for easier mixing. 
Do not crush up Biscoff cookies too finely--larger chunks are good for texture and appearance. 
Do not over bake. Bars are done when the batter no longer looks greasy, a toothpick inserted comes out clean, and the edges are firm.
