These easy cookie butter bars are made with creamy cookie butter, crispy Biscoff cookies and plenty of chocolate chips. They’re soft, chewy and a delicious treat anytime!

I’m a huge fan of cookie butter. I could easily eat it by the spoonful! But these delicious Biscoff cookie butter bars are the next best thing.

Like most cookie bar recipes, these bar cookies are soft and chewy. They also have plenty of melty chocolate chips. But what sets these Biscoff chocolate chip bars apart is the addition of warming spices from the Biscoff cookies and cookie butter. The delicious combo makes these sweet treats irresistible, and they never last long in my house!

Ingredients

Here’s a quick overview of what you need to make the bars. Full amounts are listed in the printable recipe card at the bottom of the post.

  • Butter — I use salted butter, but unsalted is fine
  • Brown sugar and white sugar
  • Cookie butter — I use Biscoff brand, but the Trader Joe’s brand or any brand is fine
  • Vanilla extract — adds flavor
  • Large eggs
  • All purpose flour
  • Baking powder — helps the bars rise
  • Salt
  • Ground cinnamon — adds a nice warming flavor
  • Semi-sweet chocolate chips
  • Biscoff cookies — adds a delicious crunch

How to Make Biscoff Cookie Butter Bars

First, melt the butter, and stir in the sugars until combined. Stir in the Biscoff spread and vanilla, then mix in the eggs, and mix until well combined.

Stir in one cup of the flour and the baking powder, salt and cinnamon. Add the remaining flour, and mix until just combined.

Then, fold in the chocolate chips and crushed Biscoff cookies. Press the dough into baking pan lined with parchment paper, and top with more chocolate chips and crushed cookies. Bake in a preheated oven for 20-25 minutes or until done. Slice into bars when cool and store in an airtight container for up to a week.

Baking Tips

Use room temperature cookie butter to make mixing easier.

Be careful not to over bake the bars. When done, the top will not look wet, and a toothpick inserted into the center of the bars should be mostly clean — some melted chocolate is ok.

Biscoff Cookie Butter Bars

Ingredients  

  • ½ cup butter
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar
  • 1 cup cookie butter spread
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon sea salt
  • 2 teaspoons ground cinnamon
  • 1½ cups semi sweet chocolate chips divided
  • 10 Biscoff cookies divided

Instructions 

  • Preheat oven to 350℉ and line a 9×13 baking dish with parchment paper
  • Add butter to a large mixing bowl, and melt in the microwave
  • Add in the granulated sugar and light brown sugar, and mix with a rubber spatula until well combined
  • Stir in cookie butter and vanilla extract
  • Add eggs, and mix until fully combined
  • Gently mix in 1 cup flour, baking powder, sea salt and cinnamon until barely combined
  • Add in remaining 1 cup flour, and mix until just combined
  • Gently fold in 1 cup of chocolate chips and 7 crushed Biscoff cookies
  • Evenly spread mixture in prepared baking dish
  • Top with remaining ½ cup chocolate chips and 3 crushed Biscoff cookies
  • Bake for 20-25 minutes, or until dough no longer looks greasy and a toothpick inserted comes out clean
  • Remove from oven, and allow to cool slightly before removing from pan
  • Slice into squares, and store in an airtight container

Notes

Can use smooth or crunchy cookie butter spread.
Make sure cookie butter is at room temperature for easier mixing. 
Do not crush up Biscoff cookies too finely–larger chunks are good for texture and appearance. 
Do not over bake. Bars are done when the batter no longer looks greasy, a toothpick inserted comes out clean, and the edges are firm.
