Ingredients

  • cups white chocolate chips
  • ¾ cup creamy cookie butter
  • 5 tablespoons butter
  • ½ teaspoon vanilla extract
  • 8 cups Rice Chex cereal
  • cups powdered sugar
  • 15 Biscoff cookies crushed

Instructions

  • Add the white chocolate chips, cookie butter and butter to a large microwave safe mixing bowl, and microwave in 20 second intervals, stirring well after each interval, until fully melted
  • Stir in the vanilla extract until fully combined
  • Add in Rice Chex cereal and gently mix with a rubber spatula until cereal is evenly coated in the cookie butte mixture
  • Place half of the powdered sugar in a large ziplock freezer bag. Add the cereal mixture, remaining half of powdered sugar and crushed Biscoff cookies. Seal bag and shake until the cereal is evenly covered in powdered sugar
  • Transfer the mixture into a serving bowl

Notes

Microwave white chocolate, cookie butter and butter in short intervals, and stir well after each interval to avoid over-heating the chocolate.
The melted cookie butter mixture is thicker than regular melted chocolate muddy buddy mixture. Make sure to use a soft rubber spatula to very gently mix the Rice Chex cereal to avoid crumbling or breaking the cereal. You can also use your hands.
Instead of adding all the powdered sugar at once, add in half of the powdered sugar to the bottom of the ziplock baggie before adding in the chocolate covered cereal mixture for easier distribution.
Top with extra slightly crushed Biscoff cookies if desired.
Store in an airtight container at room temperature for up to 1 week.
