Do you love the flavor of Biscoff aka cookie butter? I sure do! My daughter opened a jar of this creamy spread the other day, and I could have eaten it by the spoonful. Seriously.

Instead, we did the next best thing and whipped up a batch of the most delicious cookie butter puppy chow aka muddy buddies. Trust me when I say I could eat this coated cereal snack mix by the handful! And by the way, this sweet treat is for people, not puppies!

Why you’ll love Biscoff muddy buddies

This easy recipe is made without peanut butter, just cookie butter!

Not as sweet as some muddy buddy recipes.

Perfect for movie night, game night, parties or a simple snack or dessert.

Ingredients

rice chex, Biscoff, white chocolate, butter, cookie butter, vanilla, sugar.

Here are the basic ingredients. Full amounts are listed in the printable recipe card at the bottom of the post.

  • Rice Chex — generic rice puffs are fine
  • Cookie butter — I have used both the Lotus brand or Trader Joe’s brand
  • Butter — salted or unsalted
  • White chocolate chips
  • Vanilla — adds flavor
  • Powdered sugar
  • Biscoff cookies — crushed and broken cookies to top with

How to Make Cookie Butter Puppy Chow

First, you melt the butter, white chocolate and Biscoff spread and stir until creamy. You can do this in a large bowl in the microwave or in a pot on the stove. Add vanilla, then mix in the cereal until well blended. Then, use a larger freezer bag to coat the cereal mixture with powdered sugar and crushed cookies.

Quick Tips

If you’re using the microwave, melt the white chocolate in 20-second intervals and stir after each interval to avoid having the chocolate seize.

Avoid breaking the cereal by using a rubber spatula to gently mix the Rice Chex cereal into the melted chocolate mixture.

Instead of adding all the powdered sugar at once, add half to the bottom of the ziplock baggie before adding in the cereal mixture and remaining sugar. This makes it easier to evenly distribute the sugar.

Store in an airtight container at room temperature for up to 1 week.

Ingredients

  • cups white chocolate chips
  • ¾ cup creamy cookie butter
  • 5 tablespoons butter
  • ½ teaspoon vanilla extract
  • 8 cups Rice Chex cereal
  • cups powdered sugar
  • 15 Biscoff cookies crushed

Instructions

  • Add the white chocolate chips, cookie butter and butter to a large microwave safe mixing bowl, and microwave in 20 second intervals, stirring well after each interval, until fully melted
  • Stir in the vanilla extract until fully combined
  • Add in Rice Chex cereal and gently mix with a rubber spatula until cereal is evenly coated in the cookie butte mixture
  • Place half of the powdered sugar in a large ziplock freezer bag. Add the cereal mixture, remaining half of powdered sugar and crushed Biscoff cookies. Seal bag and shake until the cereal is evenly covered in powdered sugar
  • Transfer the mixture into a serving bowl

Notes

Microwave white chocolate, cookie butter and butter in short intervals, and stir well after each interval to avoid over-heating the chocolate.
The melted cookie butter mixture is thicker than regular melted chocolate muddy buddy mixture. Make sure to use a soft rubber spatula to very gently mix the Rice Chex cereal to avoid crumbling or breaking the cereal. You can also use your hands.
Instead of adding all the powdered sugar at once, add in half of the powdered sugar to the bottom of the ziplock baggie before adding in the chocolate covered cereal mixture for easier distribution.
Top with extra slightly crushed Biscoff cookies if desired.
Store in an airtight container at room temperature for up to 1 week.
