Double Chocolate Meringue Cookies
Double chocolate meringue cookies are light and airy on the outside and filled with a semi sweet chocolate chip surprise inside. They're perfect for Valentine's Day or anytime you want a sweet chocolate treat!

- 3 egg whites
- ⅛ teaspoon cream of tartar
- ⅛ teaspoon sea salt
- 1 cup granulated sugar
- 1 tablespoon cocoa powder
- 1 cup semi sweet chocolate chips
Preheat oven to 200 degrees
Add the egg whites, cream of tartar and sea salt to a large mixing bowl, and beat with hand mixer on high until foamy
Gradually beat in the sugar and cocoa powder, beating well in between
When egg whites are stiff enough to form stiff peaks and stay stiff, gently fold in the chocolate chips, using a spatula
Use a tablespoon to scoop batter on baking sheets that have been lined with parchment paper or silicone baking sheets, and top with candy sprinkles, if desired
Bake for 45 minutes or until cookies are firm and lift off of baking sheets easily
Turn heat off, and allow to cool in oven
Store in tightly covered containers
