Easy Cucumber Tomato Pasta Salad
This easy cucumber tomato pasta salad recipe is made with crisp cucumbers, ripe tomatoes, mozzarella cheese and fresh herbs in Italian dressing. It's a delicious side dish perfect for potlucks and cookouts all summer long!

- 16 oz fusilli pasta
- 1 English cucumber rinsed
- 1 pint grape tomatoes rinsed
- 8 oz mozzarella pearls
- 1 cup Italian dressing
- ¼ cup chopped basil
- ¼ cup chopped parsley
Cook pasta until just al dente in salted boiling water
Drain in colander, and rinse with cold water
Slice cucumber in half, then into half moon shapes
Add cooled pasta, cucumbers, tomatoes and cheese to a large bowl. Toss with dressing, and sprinkle fresh herbs on top
Don't skip rinsing the pasta, as this will prevent it from becoming mushy.
Use your favorite dressing. I love the Olive Garden brand or Zesty Italian, but any brand or homemade dressing will work.
If using larger cherry tomatoes, you may want to cut them in half.
