Ingredients

For the Pumpkin Bars

  • 2 cups all-purpose flour
  • cups white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3 teaspoons pumpkin pie spice
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 1 15 ounce can pumpkin puree
  • 1 cup vegetable oil
  • 4 large eggs beaten

For the Cream Cheese Frosting

  • 6 oz cream cheese softened at room temperature
  • 6 tablespoons butter softened at room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • 3 cups powdered sugar

Instructions

For the Pumpkin Bars

  • Preheat oven to 350℉ and line a 9x13 baking pan with parchment paper
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, nutmeg and salt
  • Add in the can of pumpkin, oil and beaten eggs. Beat with a mixer until fully combined
  • Pour the batter into prepared baking dish
  • Bake for 30 minutes, or until toothpick inserted in center comes out clean
  • Remove from oven, and allow to cool completely

For the Cream Cheese Frosting

  • In a medium mixing bowl, beat the softened cream cheese until smooth
  • Add in the softened butter and beat until all lumps are gone
  • Stir in the vanilla extract and cinnamon
  • Gradually add in the powdered sugar
  • Spread the frosting evenly on top of the pumpkin bars, and let them cool in the fridge until ready to serve

Notes

Be sure to use pure pumpkin and not pumpkin pie filling as that has added ingredients that will affect the flavor. If you want to use the filling, do not add the extra spices and sugar.
Let the cream cheese and butter soften at room temperature for easier mixing.
Parchment paper makes it easier to remove the bars for serving. You can use non stick spray or butter to grease the pan if you prefer.
