- 4 salmon fillets about 1.5 to 2 pounds total
- 1 tablespoon olive oil
- ¼ cup honey
- 2 tablespoons Dijon mustard
- 1 teaspoon sea salt
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- ½ teaspoon onion powder
- fresh parsley optional
Preheat oven to 400℉, and add olive oil to the bottom of a baking dish
Pat salmon dry with a paper towel, and allow to sit at room temperature while you prepare the sauce
Add the honey, mustard and spices to a small bowl, and whisk until well blended and smooth
Place salmon in the baking dish, and brush the honey mustard sauce over the salmon
Bake in preheated oven for 15-20 minutes or until flesh in opaque and flakes easily with a fork. (The USDA recommends cooking to 145℉.) Or cook to desired doneness.
Allow to rest for 5 minutes, then garnish with fresh parsley, if desired
You can use a foil-lined sheet pan in place of the baking dish.
Broil for a minute or 2 after baking salmon if you want a crispier texture on top.
I usually, cook to 135-140 to allow for carryover cooking while the salmon rests. Use an instant thermometer for best results.
You can use fresh minced garlic and fresh herbs for cooking if you have them.
