Minion Cookies

These easy Minion cookies are completely no bake. Just dip vanilla sandwich cookies into melted candy coating and add candy eyeballs. Adorable and super fun to make!

Ingredients

  • 15 Vienna finger cookies
  • 2 cups yellow candy melts
  • 1 cup blue candy melts
  • ¼ cup semi sweet chocolate chips
  • 30 candy eyeball sprinkles

Instructions

  • In a microwave safe bowl melt the yellow candy melts in 15 second increments, stirring after each increment
  • Dip the Vienna finger cookies into the melted yellow candy melts until fully covered
  • Place coated cookies on a baking sheet lined with wax or parchment paper, and allow coating to fully set
  • Microwave the blue candy melts in a small microwave safe bowl in 15 second increments, stirring after each increment, until fully melted
  • Dip the bottom half of the cookie into the blue candy melts. Transfer back to the baking sheet to set
  • Draw on overall straps with a toothpick dipped in the leftover melted blue candy melts
  • Using leftover melted candy melts as glue, stick the candy eyeballs to the top part of the cookie
  • Melt the chocolate chips in a small microwave safe bowl in 15 second increments, stirring after each increment
  • Dip a toothpick into the melted chocolate, and trace around the candy eyeballs. Add two small lines from the eye to the end of the cookie to make goggles
  • Using more melted chocolate on the toothpick, draw on hairs and a smiley face to complete the cookie
  • Allow chocolate to fully set before serving

Notes

Make sure to stir candy melts and chocolate very well after each microwave interval to avoid over-heating. This also  makes a smoother finish.
Stick the yellow coated cookies in the fridge to firm up faster and decorate quicker. 
Add 1 teaspoon of coconut oil to candy melts and chocolate to make the melted mixtures thinner and easier to work with.
