- 1 tablespoon olive oil
- 1 medium yellow onion diced
- 1 medium jalapeño pepper seeded and diced
- 2 pounds extra lean ground beef
- 4 tablespoons taco seasoning or 2 packets
- 1 cup water or beef broth
In a large skillet, cook onion and jalapeño in olive oil over medium heat until soft
Add ground beef, and cook over medium high heat until no longer pink, crumbling up with a spatula as you go. Drain if necessary
Stir in taco seasoning and water, reduce heat to medium low, and simmer until liquid is absorbed, stirring occasionally
You can use this recipe for tacos, burritos, in casseroles and salads and soups.
If you're not using extra lean beef, you may need to drain the beef before adding seasoning. You can also use turkey or chicken in place of beef.
