Peanut Butter Chocolate Chip Bars

This easy recipe for peanut butter chocolate chip bars makes delicious cookie bars filled with peanut butter and chocolate chips and topped with peanut butter cups for even more flavor. This simple dessert is guaranteed to be a family favorite!

Ingredients

  • ½ cup butter
  • ½ cup granulated sugar
  • cups brown sugar
  • ¾ cup peanut butter at room temperature
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 2 cups semi sweet chocolate chips divided
  • ½ cup mini peanut butter cups

Instructions

  • Preheat oven to 350℉ and prepare line a 9x13 baking dish with parchment paper
  • Add the butter to a large mixing bowl, and melt in the microwave
  • Add granulated sugar and white sugar, and mix until well combined
  • Stir in peanut butter and vanilla extract
  • Add eggs, and mix until fully combined
  • Mix in flour, baking powder, salt and cinnamon until just combined
  • Stir in 1¾ cups chocolate chips
  • Evenly spread mixture in prepared baking dish
  • Top with remaining ¼ cup chocolate chips and mini peanut butter cups
  • Bake for 20-25 minutes, or until dough no longer looks greasy and a toothpick inserted comes out clean
  • Remove from oven, and allow to cool slightly-about 15 minutes-before removing from pan
  • Slice into squares, and store in an airtight container

Notes

Use room temperature peanut butter for easier mixing. 
Can use smooth or chunky peanut butter. 
Batter is thick, so do not be afraid to use your hands when pressing into the baking pan. 
Do not over bake--bars are done when the edges are firm, top is no longer greasy yet still soft, and a toothpick inserted comes out clean.
