- 2 large eggs
- 2 cups all purpose flour
- 1 cup brown sugar
- 1 tsp baking soda
- ½ tsp salt
- 3 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- ⅓ cup butter melted
- ⅓ cup milk
- 1 15-ounce can pumpkin puree
- ⅓ cup semi sweet chocolate chips
Preheat the oven to 350℉
In a large mixing bowl, beat the eggs slightly
Add the flour, brown sugar, baking soda, salt, cinnamon and pumpkin pie spice, and stir to combine the mixture.
Add the cooled, melted butter.
Add the milk and pumpkin and thoroughly combine all the ingredients with a hand mixer
Stir in the chocolate chips and pour the batter into a muffin pan greased with butter.
Bake the muffins for 25-30 minutes or until a toothpick comes out clean.
You can use mini chocolate chips or omit the chocolate.
Begin testing the muffins at 25 minutes, as all ovens are different.
Be sure to use pure pumpkin puree or homemade pumpkin puree and not pumpkin pie filling.
