Taco Rice
This easy taco rice recipe combines ground beef and rice with a few simple ingredients for a quick one pan meal ready in 30 minutes. The perfect dinner for busy weeknights or lazy weekends!

- 1 tbsp olive oil
- 1 small white onion diced
- 1 medium jalapeno pepper seeded and diced
- 1½ pounds lean ground beef
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups Minute Rice
- 2 cups water
- 1 cup shredded cheddar cheese
In a large skillet, heat olive oil over medium heat, and cook onions and peppers until soft
Add ground beef, and cook over medium-high heat until brown and no longer pink. Drain grease if necessary
Stir in the taco seasoning, salsa, rice and water, and bring to a simmer
Reduce heat to low, cover with aluminum foil and cook for about 5 minutes or until rice is soft, stirring occasionally
Stir in cheese until melted, and top with additional cheese, if desired
Minute rice or any quick cooking rice works best. If you want to use long grain rice, you will need additional liquid and adjust the cooking time.
Serve with your favorite toppings.
