Cheesy Taco Pasta (Easy One Pot Meal)
This quick and easy one pot taco pasta recipe combines seasoned ground beef, tender pasta, salsa and plenty of cheese for a 30-minute meal that is sure to become a family favorite. Perfect for busy weeknights!

- 1 small onion diced
- 1 pound ground beef (extra lean)
- 2 tablespoons taco seasoning or 1 packet
- 8 oz medium shell pasta about 2 cups
- 2 cups beef broth
- 1 cup salsa thick and chunky, undrained
- ¼ cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Colby Jack cheese
In a large skillet or small Dutch oven, cook onion until soft
Add ground beef and cook over medium high heat until no longer pink, and stir in taco seasoning
Add penne pasta, beef broth and salsa, and cook until pasta is al dente, (about 10 minutes) stirring occasionally
Reduce heat to medium, stir in sour cream and cheeses, 1 cup at a time, and mix well
Serve immediately
If not using extra lean meat, drain fat after meat is cooked, and then add taco seasoning.
I use homemade taco seasoning, but you can sub 1 packet taco seasoning.
You may need to add a little more liquid as needed if pasta seems too dry.
I recommend shredding your own cheese for best results.
