The other day I posted about our delicious crock-pot pork roast dinner.
The great thing about crock-pot meals, besides being easy themselves, is that you basically cook once and eat twice or more. Who doesn’t appreciate that? This time around, we got two dinners and a lunch out of one crock-pot cooking day! For the first dinner, I heated some pork in a skillet and added some chili powder, cumin, salt, pepper, onions and a little water.
After a few minutes, we enjoyed these awesome pork tacos.
We usually have beef tacos, so this was a nice change, and I served the tacos with lettuce, tomatoes, avocados and cheese. For the second dinner, we had pulled-pork sandwiches. I just warmed up the leftover pork and added some barbecue sauce, onions, pepper and a bit of brown sugar.
I like to serve them with shredded cheddar cheese and coleslaw.
Doesn’t this look yummy? I love the fact that I can get two or more easy quick-fix meals out of one main meal. Anything that saves me time and money is a good thing!
