This one-pot skillet lasagna recipe cooks on your stove top in 30 minutes. It’s a quick and easy weeknight meal the whole family loves.

Stove Top Lasagna

This easy stove top lasagna recipe is a quick and easy way to get the delicious flavors of classic lasagna without all of the work. No layering, no baking — everything cooks in a skillet on the stove. The best thing about this easy recipe for skillet lasagna is that it is ready in about 30 minutes, making it the perfect dinner for weeknights or lazy weekends! My family loved this one pot meal, and even my picky eater went back for seconds!

Ingredient Notes

Here’s a quick overview of what you need for this simple pasta dish. Full amounts are in the printable recipe card below.

  • Lean ground beef and Italian sausage — I use a combination of beef and pork to get that classic lasagna taste. You can definitely use all beef or all sausage if you prefer or turkey sausage in place of pork.
  • White or yellow onion — to add flavor. You can use dried onions or onion powder if that’s easier.
  • Marinara sauce — Use your favorite jarred pasta sauce here. For reference, I usually use the Rao’s or Victoria brand. You will also need some water to help cook the pasta.
  • Noodles — I love using short, wide noodles that look like mini lasagna sheets if I can find them. In a pinch, I just break up a few sheets of regular lasagna noodles. You can also use bow tie pasta.
  • Ricotta cheese and Parmesan cheese — Mix these together and stir into the pasta
  • Mozzarella cheese — for the cheesy topping. Use shredded or sliced whole mozzarella
  • Seasonings — Italian seasoning, garlic powder, sea salt and black pepper. You can substitute chopped garlic for the powder.
  • Olive oil — or butter to cook the onion

How to Make Skillet Lasagna

First, you cook the onion, and brown the sausage and beef in a large skillet. Drain any grease, if necessary. Then, add the pasta sauce, water and pasta. While the pasta cooks, you can combine the Parm and Ricotta in a small bowl. Once the pasta is fork tender, stir in part of the cheese mixture, then drop dollops of cheese into the sauce. Finally, sprinkle the mozzarella on top of the sauce. You can broil the top in the oven if you are using an oven-safe skillet if you like.

Serving Suggestions

I highly recommend letting the stove top lasagna sit for a few minutes to allow the sauce to firm up a little and make serving a easier. But, if you don’t mind a little extra cheesy goodness, and you are super hungry, you don’t have to wait! We like to top the pasta with fresh basil and serve this delicious dinner with a green salad and homemade garlic bread for a complete meal.

Storing Leftovers

Refrigerate leftover lasagna in an airtight container for 3-4 days. We usually heat up leftovers in the microwave, but you can use your stove for larger portions. You can freeze the leftover pasta for up to 3 months for longer storage.

Recipe Tips

Use a large 12-inch cast iron skillet or a large pot or pan for best results. Make sure skillet is oven safe if you want to broil the dish before serving.

You can substitute cottage cheese for the ricotta and beef broth for the water, if desired.

Ingredients  

  • 1 tablespoon olive oil
  • 1 small yellow onion diced, about 1 cup
  • ยฝ pound lean ground beef
  • ยฝ pound Italian sausage casings removed
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ยฝ teaspoon sea salt
  • ยฝ teaspoon black pepper
  • 7 lasagna noodles broken into 2-inch pieces
  • 3 cups marinara sauce
  • 1 cup water
  • 1 cup ricotta cheese
  • ยฝ cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions 

  • Heat olive oil in a large skillet or pot
  • Add onions, and cook until just soft
  • Add the ground beef and sausage, and cook over medium-high heat until no longer pink, breaking up with a spatula as you go. Drain grease if needed
  • Season with salt, pepper, Italian seasoning and garlic powder
  • Stir in pasta sauce and noodles
  • Stir in water, bring to a boil, cover, and cook on medium heat until noodles are tender, stirring occasionally, so they don't stick to the skillet
  • Meanwhile, add the ricotta and Parmesan to a small bowl, and stir to combine
  • When pasta is tender, reduce heat to simmer, stir in part of the ricotta mixture, then drop dollops of the ricotta on top of the pasta
  • Sprinkle mozzarella cheese on top of the pasta, cover, and allow to melt. You can place the skillet under the broiler for a few minutes to melt the cheese, if desired

Make sure you are using an oven-safe skillet or pot if you want to broil the pasta.
You can sub cottage cheese for the ricotta and beef broth for the water. You can also use turkey sausage, or all beef for the meat.
