Soup season is here again — yea! Well actually, it’s just beginning, but I’m still excited about it. I really love soup, and honestly, there’s nothing more comforting than diving into a steaming bowl of soup when it’s cold outside.

So the other day, I was kind of stumped about what to make for dinner. We had been having a lot of chicken lately, and the kids were starting to rebel. And, I couldn’t find any other meat on sale.

It had been raining all day, so it seemed like the perfect time to make a pot of tomato soup and a few grilled cheese sandwiches to go with it. I’m not a huge fan of grilled cheese, but the kids and the Hubs are. And it goes really well with tomato soup, especially homemade creamy tomato basil soup!

I grew up on the canned version, but it’s so easy to make your own. I have a recipe for regular tomato soup, but I wanted something a little different and even easier.

This recipe for creamy tomato soup uses jarred spices, so there’s no chopping, dicing or anything else required. You just open a can of crushed tomatoes, add some chicken stock, spices, dried basil, cream and a touch of lemon, and you’re good to go.

When the soup is done, you make the sandwiches, and dinner is served! I like to add some shredded Parmesan cheese, and the kids love adding small crackers over the soup.

It’s fresh, tangy, creamy and just plain good eats!

Easy Creamy Tomato Basil Soup

Creamy homemade tomato basil soup you can make in a few minutes

Ingredients  

  • 1 28- oz can crushed tomatoes
  • 2 cups low sodium chicken stock
  • 1 teaspoon ground black pepper
  • 1 teaspoon sea salt
  • ½ teaspoon garlic powder
  • 2 tablespoons dried basil
  • 1 teaspoon lemon juice
  • ½ cup heavy cream

Instructions 

  • In a large pot, add the tomatoes, chicken stock, sea salt, pepper, garlic powder and basil, and cook over medium heat until warm
  • Stir in the basil and lemon juice, cover, and cook until hot and almost bubbling
  • Reduce heat to medium low, stir in the cream, and cook until warm
  • Top with shredded Parmesan cheese, if desires, and serve immediately

You can serve this creamy tomato basil soup as is, or you can use an immersion blender or regular blender to give it a smoother consistency. I don’t mind having bits of crushed tomatoes in my soup, but the kids like theirs to be as smooth as possible. So, I’ve made it both ways, and both are equally delicious!

This soup is perfect for easy weeknight dinners or a simple weekend lunch. My family loved it, and I hope you enjoy it as much as we did!
