My daughter asked me for an easy hard boiled egg recipe, and I gave her the easy recipe I grew up with because it is simply the best. In short, you bring the eggs to a boil on the stove, let them simmer and finish with an ice bath.

I have to confess that I was a huge fan of pressure cooking eggs. But when the Instant Pot stopped working last year when I was in the middle of making a bunch of eggs for Easter, I went back to my tried and true method — and never looked back! This really does make the best boiled eggs!

No fancy equipment or ingredients needed — just a pot of water and a stove.

Letting the eggs simmer ensures that they cook completely.

The shells peel off easily without taking the egg white with them!

  • Uncooked eggs
  • Cold water
  • Ice

How to Make Hard Boiled Eggs

First, add the eggs to pot, and pour cold water on top of the eggs — aim for about an inch. Cover, then bring the water to a rolling boil. Reduce to a simmer, and place the cover slightly ajar on the pot. Cook for 12-15 minutes, depending on how firm you like the egg yolks. Remove the cooked eggs to a bowl of ice water and remove them after 5 minutes.

Quick Tips

Don’t add too much water. A half inch to an inch is all you need.

Leave the lid slightly ajar while the eggs are simmering so they don’t boil again.

Don’t forget the ice bath. It prevents over cooking.

Tap the shell on a hard surface, then gently roll the egg to loosen the shell before peeling.

How Long do Boiled Eggs Last in the Fridge?

Hard cooked eggs keep for up to a week in the refrigerator. You can leave them in the shells or peel them. If you peel them, store them in an airtight container.

Perfect Hard Boiled Eggs

Ingredients  

  • 6 large eggs
  • water
  • ice

Instructions 

  • Place the eggs in a pot
  • Add enough cold water to cover the eggs by about an inch
  • Cover the pot, and bring to a boil over medium heat
  • Reduce to a simmer, place the lid slightly ajar on the pot, and cook for 15 minutes
  • Remove from heat, and place in a large bowl filled with ice water
  • After 5 minutes, remove the eggs, and store in the refrigerator, or peel, and eat

Notes

If you like your egg yolk a little softer, cook for 12 minutes.
Keep an eye on the eggs so they don’t overcook. As soon as the water boils, reduce the heat, and keep the lid slightly ajar so the water doesn’t boil again.
