This Italian chicken potato green bean bake is an easy one dish dinner made with chicken breasts, red potatoes and fresh green beans all seasoned with a packet of Italian dressing mix. With minimal prep and one pan to wash, this simple meal is perfect for busy weeknights!

Sometimes, you just have to go back to the basics, like this chicken green beans red potatoes with Italian dressing recipe. This is a retro recipe that I would classify as comfort food. I think it was originally from the 70’s or 80’s, but it has definitely stood the test of time.

This easy chicken dinner is absolutely delicious and kid approved! In fact, my picky eaters even went back for seconds!

The only seasoning is a dressing packet, which is perfect if you don’t have a lot of spices on hand.

  • Boneless skinless chicken breasts
  • Red potatoes — I use the baby ones and quarter them. No need to peel!
  • Green beans — l love using fresh, but you can use frozen green beans or canned in a pinch
  • Italian dressing packet — You can usually find this in the same aisle as the salad dressing and soup mixes.
  • Butter and olive oil

How to Make Italian Chicken Potatoes and Green Beans in the Oven

First, you’ll wash and cut the potatoes and green beans and slice the chicken into smaller pieces. Next, add some of the oil to the baking pan, then add the chicken and potatoes. Add about half of the seasoning packet, then add the beans. Add the remaining oil and seasoning and top with the butter. Cover, and bake for 45 minutes. Then, remove the foil and bake for another 10-15 minutes or until fully cooked.

Recipe Tips

Be sure to cut the potatoes into small quarters so they cook evenly.

You don’t need to cut the chicken into small pieces. I usually cut each breast into thirds.

There’s no need to add any extra liquid. The butter and oil, plus the juices from the chicken are enough to make a light sauce.

Italian Chicken Potato Green Bean Bake

Ingredients  

  • 2 tablespoons olive oil divided
  • 2 tablespoons butter
  • 1½ pounds boneless skinless chicken breasts
  • 1 pound baby red potatoes washed
  • 8 ounces fresh green beans washed
  • 1 packet Italian dressing mix

Instructions 

  • Preheat oven to 350℉
  • Cut potatoes into small quarters, about 1 inch
  • Cut beans into bite size pieces
  • Add 1 tbsp oil to the bottom of a 9×13 baking dish
  • Cut the chicken into large pieces, and place in center of pan
  • Add potatoes on either side of chicken, drizzle remaining olive oil on top, and sprinkle about half of the dressing mix over the meat and potatoes
  • Place green beans over potatoes, and sprinkle remaining seasoning on top
  • Add butter, cover with aluminum foil, and bake for 45 minutes
  • Remove foil, and bake for another 10-15 minutes or until chicken is 165℉, according to a meat thermometer, and potatoes are tender

Notes

I usually slice each chicken breast into thirds or about 2 inch-pieces, depending on the size.
You can sub frozen or canned green beans for fresh.
There is no need to add any extra liquid as there is plenty from the oil, butter and juices from the chicken.
