Why you’ll love these cookie butter cookie bars

- Can be made in one bowl for easy clean-up
- Faster than making cookies
- Perfect for a quick dessert or sweet snack with a cup of coffee or glass of milk!
Ingredients

Here’s a quick overview of what you need to make the bars. Full amounts are listed in the printable recipe card at the bottom of the post.
- Butter — I use salted butter, but unsalted is fine
- Brown sugar and white sugar
- Cookie butter — I use Biscoff brand, but the Trader Joe’s brand or any brand is fine
- Vanilla extract — adds flavor
- Large eggs
- All purpose flour
- Baking powder — helps the bars rise
- Salt
- Ground cinnamon — adds a nice warming flavor
- Semi-sweet chocolate chips
- Biscoff cookies — adds a delicious crunch
How to Make Biscoff Cookie Butter Bars
First, melt the butter, and stir in the sugars until combined. Stir in the Biscoff spread and vanilla, then mix in the eggs, and mix until well combined.
Stir in one cup of the flour and the baking powder, salt and cinnamon. Add the remaining flour, and mix until just combined.
Then, fold in the chocolate chips and crushed Biscoff cookies. Press the dough into baking pan lined with parchment paper, and top with more chocolate chips and crushed cookies. Bake in a preheated oven for 20-25 minutes or until done. Slice into bars when cool and store in an airtight container for up to a week.

Baking Tips
Use room temperature cookie butter to make mixing easier.
Be careful not to over bake the bars. When done, the top will not look wet, and a toothpick inserted into the center of the bars should be mostly clean — some melted chocolate is ok.
