Ground Beef and Potato Skillet
I made this easy ground beef dinner when I had a pound of ground beef to use up. Instead of adding the usual pasta or rice, I made this one pan meal with baby potatoes and peas and a little bit of cheese.
My kids loved this simple version of meat and potatoes, and my son even had seconds! The leftovers are even better and perfect to heat up for a quick lunch or dinner the next day.

- Lean ground beef — I like extra lean meat in skillet meals. You can use an 80/20 blend and drain the fat if needed.
- Mini potatoes — I love baby gold potatoes — just wash and slice!
- Beef broth — Adds so much flavor
- Butter — Adds flavor, but you can use oil
- Spices — sea salt, black pepper, garlic powder, dried onions, sweet paprika, dried parsley
- Ketchup
- Frozen peas
- Cheddar cheese
How to Make Ground Beef and Potatoes
First, you brown the meat in a large skillet. Remove the meat to a plate, then add the potatoes and broth. Cook until just tender, then add the meat back in, and stir in the remaining ingredients. Let it simmer until the potatoes are done and the sauce is slightly reduced, then serve.




Quick Tips
I like to brown the meat on both sides before breaking it up for more flavor.
Be sure to cut the potatoes in uniform pieces so they cook evenly.

Variations
If you don’t have parsley, Italian seasoning or herbes de Provence are good substitutions.
You can sub water in place of broth.
Try your favorite chopped frozen veggies here. I like using dried spices to save time, but you can also add diced bell peppers or diced onions if you have the time.
American cheese adds a delicious cheeseburger flavor to this meal.

Ingredients
- 3 tablespoons butter divided
- 1 pound lean ground beef
- 1 pound baby gold potatoes washed and diced
- 1 teaspoon sea salt
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- ½ teaspoon paprika
- 1 tablespoon dried minced onions
- 2 teaspoons dried parsley
- 2 cups beef broth or water
- 1 tablespoon ketchup
- 1 cup frozen peas
- 1 cup shredded cheddar cheese
Instructions
- In a large non stick skillet, melt 1 tablespoon butter
- Add ground beef, and cook until no longer pink over medium heat, crumbling it up as it cooks. Sprinkle some of the seasoning in as it browns.
- Remove beef to a clean plate, and cover with foil
- Add potatoes to skillet, sprinkle part of the seasoning over potatoes, and add 1 cup beef broth
- Cover, and cook for 10-15 minutes or until potatoes are just tender
- Add beef back to skillet, and mix in remaining seasoning, remaining beef broth, ketchup and remaining butter
- Stir in the peas, and cook uncovered until tender
- Reduce heat to low, and stir in the cheese until melted
- Serve immediately
