One of my favorite side dishes to make in the fall is roasted sweet potatoes in the oven. Simply seasoned, tender, yet crispy, they are absolutely melt-in-your-mouth delicious.

I keep the basic roasted sweet potato recipe simple. This way, it’s a very versatile dish that can be enjoyed as a side or used in salads, bowls, tacos and burritos!

Ingredients

3 medium sweet potatoes, olive oil, seasonings.

  • Sweet potatoes — l like small to medium potatoes as they are easier to cut
  • Olive oil — prevents the potatoes from drying out
  • Seasonings — sea salt, black pepper, garlic powder

How to Make Roasted Sweet Potatoes

First, scrub the potatoes well under cold running water. Pat dry, then peel and cut sweet potatoes into rounds. Next, slice the rounds into cubes, roughly the same size. Place in a mixing bowl, and toss with olive oil and seasonings. Place on a large baking sheet lined with parchment paper or foil, and bake for 20 minutes or until cooked to your liking, stirring once or twice.

Tips for Perfect Sweet Potato Cubes

Slice into cubes about 1/2-inch thick.

Don’t be tempted to add too much oil, or the potatoes will steam.

Stir or flip potatoes once or twice while they are roasting.

For extra crispy sweet potato cubes, let them cook a little longer.

Seasoning Variations

Add a teaspoon of dried rosemary or a tablespoon of fresh chopped rosemary.

Add smoked paprika or sweet paprika and onion powder for extra flavor.

For a sweeter version, season with brown sugar and maple syrup.

Or, make a sheet pan dinner with different veggies and a protein.

Easy Roasted Sweet Potatoes

Ingredients  

  • 3 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions 

  • Preheat oven to 425℉
  • Scrub sweet potatoes with a brush under cold running water
  • Pat dry with paper towel or kitchen towel
  • Peel sweet potatoes using a vegetable peeler
  • Slice into rounds, then slice rounds into cubes about 1/2 inch thick
  • Place in a bowl, and toss with olive oil, and seasonings
  • Spoon onto a parchment paper-lined baking sheet
  • Bake for 20-25 minutes, or until cooked through, stirring once or twice so they cook evenly
  • Serve immediately

Notes

Cut potatoes roughly the same size so they cook evenly.
For extra crispy sweet potatoes, cook about 5 minutes longer.
