If you’re looking for recipes for beef stew meat that are not stew, you’re going to love this easy crockpot beef and potatoes recipe. The meat is tender and flavorful, and the potatoes are soft and buttery. I like to throw in some green beans for a complete meal. I have made this easy recipe for dinner a few times now, and my family absolutely loves it! Even my picky eater went back for seconds, and we had no leftovers.
The best part about this simple slow cooker meal is you just add everything to the crock pot and let it cook. There is hardly any prep work involved, and no separate sides to make — it’s a one dish meal!

- Beef stew meat — You can also use beef tips or cut up steak, but stew meat is ideal for the slow cooker.
- Baby potatoes — I use Baby Dutch or Yukon gold but baby red potatoes will also work.
- Garlic — I use a mix of minced garlic cloves and garlic powder for maximum flavor
- Lipton onion soup mix — makes a delicious beef gravy
- Spices — black pepper, sea salt
- Green beans — I use fresh, but you can add canned or frozen
- Water — or beef broth
- Butter — for the delicious sauce
How to Make Slow Cooker Beef Bites and Potatoes
All you do is add the meat and potatoes to the slow cooker — no need to cut them unless they are extra thick. Add the garlic, seasonings and butter and water. Stir occasionally, and add the beans during the last hour or two so they don’t get too soft. We like to serve it with a side of garlic bread.
Recipe Tips
If the potatoes are on the larger side or you are using regular potatoes, cut them into smaller pieces so they cook evenly.
I don’t add much salt since the soup mix can be salty, so add salt, to taste, when serving.
Storage Tips
Store leftovers in an airtight container in your refrigerator for 3-4 days. This makes a great freezer meal that you can freeze for up to 3 months as it reheats well.

Ingredients
- 2 pounds beef stew meat
- 1 ยฝ pounds baby potatoes
- 1 packet onion soup mix
- 1 teaspoon garlic powder
- ยฝ teaspoon sea salt
- ยฝ teaspoon ground black pepper
- 3 garlic cloves minced
- 4 tablespoons butter
- ยฝ cup water or beef broth
- 1 pound green beans trimmed
Instructions
- Spray bottom of slow cooker with non stick cooking spray
- Add beef and potatoes to slow cooker
- Season with soup mix, salt, pepper garlic powder, and minced garlic
- Add butter and water
- Cook for 3-4 hours on high or 6-8 hours on low, stirring occasionally
- Add green beans and more butter, if desired, in the last hour or two so they don't get too soggy
