Not long before Christmas, I posted about my new favorite way to enjoy the taste of chocolate chip cookies. I have always loved chocolate chip cookies, and I’ve been making them for years, but they do take a while to make. So this year, I decided to look for a good bar recipe. After I played around with several variations, these Double Chocolate Chip Cookie Bars were born.

I referred to the original recipe as The Best Chocolate Chip Cookie Bars Ever because my family and I absolutely loved them, and we used part of the title for this Valentine’s Day treat. I’m really not that egotistic–as a chocolate lover, this is my opinion! You can view the original post for pictures detailing each step of the process, but it really is easy.

This time, we added pink and red candies to the top for Valentine’s Day. When the bars were done, we sprinkled some sugar crystals over the top. You do have to be careful to watch the bars–these were ready after about 20 minutes instead of 25. I usually test them with a toothpick when I see the edges turning brown.

The middle will be full of ooey, gooey chocolatey goodness, so you may want to wait a few minutes before you cut them–if you can.

Then, you can dive into your own private chocolate nirvana! These bars stay soft for a couple of days–if they last that long. This last batch disappeared after only a day. Of course, everyone acted surprised when the bars were all gone!

Some chocolate chip cookie bars, a glass of milk and thou–what more can a person ask for?


Ingredients:

2 cups flour
1/2 cup white sugar
1 1/2 cups light brown sugar
1/2 teaspoon salt
2 teaspoons baking powder
2 teaspoons cinnamon
1 cup semi-sweet chocolate chips
1/2 cup butter
1 teaspoon vanilla extract
2 eggs
pink and red chocolate candies
sugar crystals if desired

Directions:
Preheat your oven to 350 degrees.

In one medium-sized microwaveable bowl, melt the butter in the microwave, and add the brown sugar and white sugar, and stir well. The batter will be stiff. Then, add the eggs, and beat well after each egg is added. Then, add the vanilla, and stir well.

Gradually add the flour to the mixture, and add the salt, baking powder and cinnamon. Then, add the chocolate chips. You can add more than one cup, in fact, we usually do, but it’s up to you. 

Press the mixture into a greased 9×13 baking dish, and add some candies to the top. Bake at 350 degrees for 25 to 30 minutes, or until the edges are slightly brown and a toothpick comes out clean. You can add some sugar crystals to the top for some extra sparkle. Enjoy!
