So, the other day, I made the most delicious French toast using leftover pumpkin bread. Believe me, it did not disappoint! I made quite a bit, thinking it would be good to have leftovers, and my kids polished off every. last. piece.

Pumpkin and spice and everything nice. That’s what this scrumptious fall breakfast recipe is made of!

Ingredients

  • Pumpkin bread — either homemade from scratch or using cake mix. The most important thing is that it needs to be a few days old so it’s not too soft to work with!
  • Eggs — for the custard
  • Heavy cream — makes the custard nice and rich
  • Pumpkin pie spice — for a little extra fall flavor

How to Make Pumpkin Bread French Toast

Slice the bread into thick pieces about a half inch thick. In a shallow dish, whisk the eggs, then whisk in the cream and pumpkin pie spice until well blended. Heat a non-stick griddle over medium heat. Gently dip each piece of pumpkin bread into the egg mixture, then quickly flip it over so both sides are covered. Cook on the hot griddle flipping once or twice until both sides are golden brown. Repeat until all slices are done.

Tips

Use bread that is a few days old. Or, let slices of pumpkin bread sit out for awhile before cooking to dry a little.

Don’t soak the bread in the custard. Just dip it very quickly so both sides are coated with the egg mixture.

Keep the toast warm on a baking sheet in the oven while you finish frying all of the slices.

Variations

You can use half and half or whole milk in place of the heavy cream. If you use milk, you may want to add another egg for a richer custard.

Ingredients  

  • 8 slices pumpkin bread
  • 2 large eggs
  • 1 cup heavy whipping cream
  • ½ teaspoon pumpkin pie spice

Instructions 

  • Slice loaf of pumpkin bread into thick slices about ½ inch thick
  • Add eggs to a shallow dish, and whisk
  • Whisk in heavy cream and pumpkin pie spice until well blended
  • Heat a non-stick griddle over medium heat
  • Gently dip a slice of bread into the egg mixture, then quickly flip to coat the other side
  • Do not soak the bread
  • Cook the bread on the preheated griddle, flipping once or twice until both sides are golden brown
  • Repeat the process until all slices of pumpkin bread are used up

Notes

I use my pumpkin bread that is a few days old. You can also let it sit out before using for best results.
Don’t let the bread soak in the egg mixture. Just quickly dip both sides until coated.
Keep warm on a baking sheet in the oven until all pieces are done.
