Are you done with your holiday baking yet? The kids and I are just getting started. We’ve made a few treats already, but as it gets closer to Christmas, the baking urge really sets in, and I get motivated to try new recipes, especially if they are easy. So yesterday, we made these Candy Cane Crinkle Cookies, and not only were they super easy, but they were also big hit with our entire crew!
Another nice thing about these cookies is that they only require four basic ingredients — yep, four! So, they are perfect for times when you want to whip up some treats in a hurry. We did add some candy cane sprinkles on top for extra color and flavor.
- 1 box of yellow cake mix
- 1 8-oz tub of Cool Whip
- 1 egg
- Powdered sugar for rolling
- Candy cane sprinkles for topping
We used candy cane sprinkles, which have a slight peppermint taste. I suppose you could also add a bit of peppermint extract if you want a stronger flavor. We also sprinkled some sugar crystals on the cookies after they were done, just for some extra sparkle. Gotta have lots of sparkle around Christmastime!
They are also slightly messy, but if you don’t mind getting your hands filled with cookie dough and powdered sugar, this won’t bother you at all. We just kept lots of paper towels on hand!
These cookies are soft and chewy, with just the right amount of sweetness. And, since I have other baking to do, I love it when I find a recipe that’s so simple.
