These pumpkin eggs are so adorable and also very easy to make. You can’t really taste the pumpkin — it just enhances the flavor and adds a little bit of color without using food coloring.

Ingredient Notes

Here’s what you need to make them. Full ingredients are in the printable recipe card below.

  • Hard boiled eggs — Cook them on the stove or in the Instant Pot. Then, place in a bowl of ice water for about 5 minutes or until cool.
  • Mayonnaise — It doesn’t really matter what brand you use, but I advise using mayo and not Miracle whip as flavor will be different.
  • Pumpkin puree — pure pumpkin, not pie filling!
  • Dijon mustard — ads a hint of tang
  • Salt and pepper — to taste
  • Sweet paprika — for garnish
  • Chives — for the stems

How to Make Pumpkin Deviled Eggs

Peel the eggs, slice in half, and add the yolks to a small bowl. Then, add everything but the paprika and chives, and mix. Pipe the yolk mixture into the egg whites using a piping bag or plastic bag with a corner cut off. Sprinkle with paprika. Then, use a toothpick or knife to form the ridges in the filling. Finally, add the chive stems.

Recipe Tip

Use a napkin to wipe the toothpick off after you make each line so they are more defined.

Add a pinch of pumpkin pie spice with the paprika for a little extra flavor! It’s actually very tasty!

Storage

Store the eggs in an airtight container or in a tray covered with plastic wrap in the refrigerator. They stay fresh for 3-4 days.

Ingredients  

  • 6 hard boiled eggs
  • ยผ cup mayonnaise
  • 2 tablespoons pure pumpkin puree
  • 1 teaspoon Dijon Mustard
  • ยผ teaspoon sea salt optional
  • ยผ teaspoon black pepper optional
  • โ…› teaspoon sweet paprika for garnish
  • chives chopped

Instructions 

  • Peel the eggs, and slice in half vertically
  • Scoop out the egg yolks, place in a mixing bowl, and set the egg whites aside
  • Mash the yolks with a fork
  • Stir in the mayo, pumpkin, mustard, salt and pepper, and mix until well combined
  • Fill the egg whites with the yolk mixture using a piping bag with a round tip or small spoon
  • Top each egg with a sprinkle of paprika
  • Use a toothpick to make lines in the filling, then place a chopped chive in the filling to form a stem
  • Refrigerate in airtight container or covered with plastic wrap until ready to serve

Notes

The eggs are best made the day you are serving. If you want to make ahead of time, I recommend that you cook the eggs up to 2 days in advance, and make the deviled eggs the day you are serving. Refrigerate leftover eggs within 2 hours of serving.
There is a very subtle pumpkin flavor. You can add extra pumpkin if you want a more pronounced flavor. Try a pinch of pumpkin spice on top of the eggs for a very unique flavor!
