These Pumpkin Spice Muffins with Cinnamon Glaze are made from a cake mix but taste like they come from a bakery. And, they take only a few minutes to make!

Hey friends! It’s the first day of fall, and since it’s my favorite time of the year, I felt compelled to mark the occasion by whipping up a batch of Pumpkin Spice Muffins with Cinnamon Glaze. Don’t they look elegant? And the best part is these tasty treats come from a box of cake mix and take only a few minutes to make.

But since this was so easy, I just had to add a little extra something, so I topped them off with a very light cinnamon-powdered sugar glaze. And friends, these muffins are absolutely wonderful. They really do taste just like fall! I had a big plans for this week, including finally starting my fall decorating. It’s been so hectic around here lately that I haven’t had a chance to get started on that. I also went to my first blog conference over the weekend, which was amazing, and when I came home, I managed to throw my back out — yikes!

So, I really haven’t done much cooking lately, but I felt better enough today, and I thought I could manage a batch of easy 2 ingredient pumpkin muffins. 

I’ve been making these easy cake mix muffins forever, but this time I did something a little different, and I used a spice cake mix instead of a regular yellow mix. And wow, does this ever make a difference!

I also added a heaping cup of white chocolate chips instead of the usual semi sweet.

And then, there’s that fabulous glaze I mentioned. The white chocolate chips add plenty of sweetness to the muffins, so I didn’t want to go overboard. But, the cinnamon adds the spice right back in, so it’s a perfect balance in the end.

I loved the glaze so much that I even added a little extra after I cut the muffin open. Mmmm — perfect!

And then, I was a very, very good mom, and I put the rest of the muffins away so that the kiddos could taste them when they came home from school. But oh, was I ever tempted to have another one!

Pumpkin Spice Muffins with Cinnamon Glaze

3 ingredient pumpkin spice muffins topped with a delicious cinnamon glaze
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Servings: 12

Ingredients  

  • 1 box spice cake mix
  • 15- oz can of pumpkin not pumpkin pie filling
  • 1 cup white chocolate chips
  • ½ cup powdered sugar
  • ¼ teaspoon ground cinnamon
  • 1 ½ tablespoons milk

Instructions 

  • Mix the pumpkin and the cake mix together in a large bowl, and stir in the white chocolate chips.
  • Spoon into a greased or paper-lined muffin tin, and bake at 350 degrees for about 20 minutes, or until toothpick comes out clear.
  • Top with additional white chocolate chips if desired.
  • Mix the powdered sugar, cinnamon and milk together, and drizzle lightly over the tops of the muffins.
  • Enjoy!

It’s almost time for me to pick up the kiddos, and I can’t wait for them to try these pumpkin spice muffins! I may even splurge and treat myself to another one.

    YUM! These sound delicious, Dee! I just love the smell of spice-infused goodies (or good old banana bread) baking this time of year. Would you believe my oven is broken? We have one of those double wall oven units with the combo regular oven & convection on top and a regular oven below. The Man tried everything he could think of to fix it, and finally found a place in Texas that will repair the mother board…..much less expensive than replacing the dang thing. Hopefully we will get it back soon and all will be well with the world!
