These adorable birds nest cookies are no-bake treats made with chow mein noodles, peanut butter, chocolate and candy eggs. Perfect for Easter and Spring and easy enough for kids to help make!

If you’re looking for a cute and super easy Easter treat, you’re going to love this easy no-bake birds nest cookies recipe. They’re made with only 4 ingredients, and you don’t even need to bake them — which is always a plus when the weather turns warmer!

These chow mein cookies are similar to our fall haystacks, except this easy recipe uses chocolate instead of butterscotch, and we use candy eggs instead of pumpkins. Like our bird’s nest cupcakes, these cookies are perfect for any spring gathering!

Ingredients Needed

Here’s what you need to make the nests. Full amounts are in the printable recipe card below.

  • Creamy peanut butter — any brand.
  • Milk chocolate chips — We chose milk chocolate so the color would be a lighter brown. You can use your favorite kind here. Semi-sweet chocolate chips, dark chocolate or even butterscotch chips will work.
  • Dried chow mein noodles — Look for these in the Asian aisle of your grocery store. They come in bags or smaller tins.
  • Candy eggs — We used Cadbury mini eggs, but robin’s eggs, jelly beans or any small egg candies will work.

How to Make Bird’s Nest Cookies

First, you need to melt the chocolate chips. We use a microwave for this, but you can use the stove top if you want. When the chocolate is melted, stir in the peanut butter until well combined. Then, stir in the noodles until they are coated in chocolate. Drop the noodles onto a baking sheet lined with parchment paper or wax paper, and form into a nest shape. Finally, place 3 mini eggs into the center of the nests, and allow to dry.

Storage

Store the nests in an airtight container. They keep fresh for about 2 weeks. If your house is warm, you may need to keep the nests in the fridge, but you can leave them at room temperature if your house is cool enough. You can even freeze the cookies for up to 3 months.

Recipe Tips

Add the eggs when the chocolate is still wet so that they stick to the nests. You can have kids help with this part!

If you want to speed things up, pop the tray in the fridge to help the cookies dry faster.

Always melt chocolate in the microwave in short increments so it doesn’t seize up.

Ingredients  

  • 1ยฝ cups milk chocolate chips
  • ยพ cup creamy peanut butter
  • 3 cups crunchy chow mein noodles
  • 1 bag Cadbury mini chocolate eggs

Instructions 

  • In a large bowl, melt the milk chocolate chips and the peanut butter in 30 second intervals in the microwave, stirring after each interval
  • Mix in the chow mein noodles until evenly coated
  • Use a tablespoon to scoop the mixture and drop onto wax paper lined baking sheets, and shape into birds nests
  • Press 3 mini eggs on the top of each birds nest
  • Refrigerate until cool and firm

Add the mini chocolate eggs onto the birds nests while the chocolate is still melty to ensure the eggs will stick.ย
