Yes, you can make a cake without eggs, oil or butter! This easy banana pumpkin cake is perfect for using up that last bit of pumpkin puree or when you’re running low on pantry staples!

We go through a lot of bananas in our house, so I make it a habit to buy a bunch whenever I’m at the grocery store. If we end up with too many, that means banana bread!

We just had banana bread on the weekend. But since I had more bananas to use up and a little bit of pumpkin puree, I decided to make something a little bit different today.

Did I mention we were also out of eggs? So, I used a cake mix instead of my usual recipe and called it banana pumpkin snack cake!

How to Make a Cake without Eggs, Oil or Butter

In this case, both the pumpkin and the banana are substitutes for the eggs and the oil. You can also use applesauce in place of butter and oil.

We make pumpkin muffins with just cake mix and pumpkin. And, we make banana applesauce muffins with bananas and applesauce instead of oil.

How to Make Banana Pumpkin Cake from Cake Mix

All you do is add the cake mix to a large mixing bowl. Then, add the rest of the ingredients and mix well!

I added nutmeg and cinnamon, so it’s got a hint of spice too. Oh, and there’s chocolate — gotta have some lovely chocolate!

Grease or butter the cake pan very well, then pour in the batter, and bake it!

The cake is kind of dense, and definitely not dry! It’s kind of crumbly when you first slice it, and it’s actually easier to slice when it cools down.

When the kids came home, they absolutely loved this snack cake, so we’re calling this one a hit!

All you need to finish it off is a light dusting of powdered sugar on the top. It adds a touch of sweetness, but you can definitely eat it plain, too!

Ingredients  

  • 1 box of yellow cake mix
  • 3 ripe bananas mashed
  • ½ cup pumpkin puree
  • 1 tablespoon cinnamon
  • ½ teaspoon nutmeg
  • ½ cup chocolate chips

Instructions 

  • Preheat the oven to 350.
  • Grease a 13 X 9-inch baking pan.
  • In medium bowl, mix the cake mix, bananas, pumpkin, cinnamon and nutmeg together.
  • Stir in the chocolate chips.
  • Pour the mixture into the baking dish and bake for 25 to 30 minutes or until toothpick comes out mostly clean — may have a few crumbs on it

Notes

If you don’t like cinnamon, you can reduce the amount or leave it out.
Cake may look slightly wet on top, but toothpick inserted into center should be mostly clean. It may have some crumbs sticking, but this is normal. Don’t over bake.
