This recipe for Homemade Hamburger Helper Beef Stroganoff combines ground beef and egg noodles in a creamy sauce. Made in one pot in 30 minutes, this easy dinner is better than the box stuff and sure to be a family favorite!
Ground Beef Stroganoff
This easy homemade hamburger helper stroganoff recipe is basically stroganoff made with hamburger meat — ground beef — instead of steak or stew meat. This delicious dinner comes together quickly and is very budget friendly!
I grew up on the boxed recipe, but this homemade version of hamburger stroganoff is made from scratch using simple ingredients and without cream of mushroom soup or artificial flavors. It’s also one of my family’s favorite one pan meals, and that’s definitely a good thing because these people can be picky. And they aren’t afraid to let me know when they don’t like something!
One of the best things about easy ground beef recipes like this is that it’s a delicious way to stretch out a pound of ground beef. We have a large family and a pound of ground hamburger for 6 or 7 people is doable when you mix it in with other ingredients.

- Ground beef — Use lean ground beef if you can
- Seasonings — minced onions, sea salt, garlic powder, black pepper, smoked paprika
- Worcestershire sauce
- Low sodium beef broth
- Egg noodles
- Dijon mustard
- Sour cream — for a delicious creamy sauce
When making this one pot beef stroganoff recipe, I like using a 12-inch skillet because it perfectly holds all the ingredients. A 10-inch skillet will also work though.
How to Make Homemade Hamburger Helper Stroganoff in a Skillet
First, brown your ground beef in a large skillet on medium heat. Season the beef with salt, garlic, pepper, minced onions and paprika.
Since, I use very lean ground beef, I add the seasonings while cooking since I don’t have to drain the beef.
If you need to get rid of the excess grease, you may want to add your seasonings after you drain the beef.
Next, add the Worcestershire sauce, beef broth and uncooked egg noodles to the skillet. Stir well, and cook on medium-high heat until the egg noodles are soft.
When the egg noodles are cooked, reduce the heat to medium or low heat, and stir in the sour cream and mustard.
The addition of sour cream adds traditional flavor and creaminess to stroganoff!
Let the ground beef and noodles simmer until the liquid reduces and the sauce thickens.
Before serving, I love adding some fresh parsley and an extra dollop of sour cream on top to this creamy pasta meal.
Cooking Time
The cooking time is about 20 to 25 minutes. This includes time to brown the ground beef and time to cook the noodles and sauce. Total cook time may vary with different stoves or the type of ingredients you use.
How to Store and Reheat
Store any leftover hamburger and noodles in an airtight container or in a large bowl covered with plastic wrap in the fridge for 3-5 days. You can freeze leftovers for up to 3 months. Reheat in the microwave or on the stove for best results.
Substitutions and Variations
A great way to add veggies in the mix for this hearty ground beef recipe is to throw in some frozen peas or green beans at the end — I thaw them first. You can also use fresh onions, garlic cloves or fresh mushrooms.
Substitute minced onions with one teaspoon of onion powder.
Don’t have egg noodles? Use your favorite kind of short pasta instead. Penne pasta and rotini or bow ties are good substitutes for egg noodles.
If you don’t have beef broth on hand, beef stock, chicken broth, or even water will work just as well. Add a half cup to 1 cup heavy cream for extra creaminess.

Homemade Hamburger Helper Beef Stroganoff
Ingredients
- 1 pound extra lean ground beef
- 2 teaspoons dried minced onions
- 1 teaspoon sea salt
- 1 teaspoon granulated garlic
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 1 teaspoon Worcestershire sauce
- 3 cups low sodium beef broth
- 4 cups egg noodles uncooked
- 1 teaspoon Dijon mustard
- ½ cup sour cream
Instructions
- In a large skillet or pot, add the ground beef, break up with a spoon, and add the dried onions, sea salt, garlic, pepper and paprika, and cook until no longer pink
- Stir in the Worcestershire sauce, beef broth and egg noodles and cook on medium high heat until noodles are soft, stirring frequently
- Reduce heat to medium, and stir in the sour cream and Dijon mustard
- Let simmer until sauce reduces and thickens, then serve immediately
