This easy grilled turkey sandwich with melty provolone cheese and dried cranberries is so simple, yet satisfying and perfect for a hot lunch or quick dinner.

Turkey Grilled Cheese Sandwich

I adore a good turkey sandwich. Sometimes, I’ll make them cold with lots of fresh toppings. But, grilled turkey sandwiches with melted cheese are a favorite around here.

I make these hot turkey sandwiches more like turkey grilled cheese, with more cheese than turkey. You’ll love that cheese pull! And for extra flavor, I throw on some dried cranberries and a squirt of Dijon mustard. Yum!

Ingredients

Here are the basics. Complete amounts are listed in the printable recipe card below.

  • Sourdough breadhomemade sourdough is great, but you can use any kind of sandwich bread here
  • Sliced turkey — thin slices of deli turkey work best
  • Provolone cheese — Look for thinner slices, not super thick
  • Mayonnaise — I use this instead of butter for the outside, and a little bit goes inside
  • Dried cranberries — add flavor without making the sandwich too wet
  • Dijon mustard — adds a little zip

How to Make a Grilled Turkey Sandwich

Simply spread a thin layer of mayo on each slice of bread. Then, add a thicker layer of mayo to the other side of one bread slice. Spread a little bit of mustard over the mayonnaise, and sprinkle some Craisins over the condiments. Add provolone and turkey, and top with second slice of bread. Cook on a hot griddle, turning once or twice, until bread is golden brown on both sides, and cheese and turkey are heated through.

Tips for Perfect Hot Turkey and Cheese

Don’t add too much mayonnaise to the outside of the bread as it won’t brown evenly.

Adding the cranberries over the condiment layer and topping with cheese will prevent them from falling out.

Use a spatula to press the sandwich down once or twice for a panini-like effect.

A griddle pan makes turning sandwiches easy, but any frying pan works.

Variations

Mozzarella cheese will also give a great cheese pull. Muenster and havarti also work well. Even cheddar cheese or American cheese or Swiss cheese will melt beautifully.

Pepper jelly adds delicious flavor and a little heat.

You can use leftover Thanksgiving turkey, but it may not give the same effect as a grilled turkey and cheese sandwich.

The Best Grilled Turkey Sandwich

Ingredients  

  • 2 slices sourdough bread
  • 1 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon dried cranberries
  • 2 slices Provolone cheese or 4 very thin slices
  • 2 slices turkey breast

Instructions 

  • Spread a thin layer of mayonnaise on the outside of each slice of bread
  • Flip one bread slice over, and spread remaining mayo on the inside of the bread
  • Spread the mustard on top of the mayo
  • Sprinkle the cranberries on top of the mustard
  • Place the cheese slices evenly on top of the cranberries
  • Top with sliced turkey, and place the second slice of bread on top, with the mayo on the outside
  • Heat a griddle pan on the stove over medium heat, and cook the sandwich for 2-3 minutes per side or until golden brown and heated through. The cheese should be completely melted

Notes

If you’re using very thin slices of cheese, you can use up to 4 slices. I usually use 2 slices if they are thicker.
Mozzarella and Muenster are good subs for the Provolone. You can also combine different cheeses.
You can use softened butter in place of the mayo.
