This super easy air fryer chicken breast and potatoes recipe is definitely a winner! If you’re looking for easy air fryer recipes you will want to try this delicious air fryer chicken recipe! A whole meal in just 30 minutes!

I have a decent collection of sheet pan chicken dinners, but this is the first time I’ve made a complete meal in the air fryer. It’s so simple this way, and you don’t have to worry about heating up your kitchen — a HUGE plus in the summer!

What I love most about cooking chicken breasts in the air fryer is that you get that gorgeous dark color on the outside, but inside, the meat stays nice and juicy.

No more dry chicken, friends! And the potatoes are done perfectly — crispy skin on the outside and buttery soft inside.

Ingredients

You only need a few simple ingredients for this air fryer chicken breast recipe. You can find them in your grocery store or online.

  • Boneless skinless chicken breasts
  • Baby potatoes — perfect for air frying
  • Seasonings — Sea salt, black pepper, garlic powder, herbes de Provence, dried minced onions
  • Broccoli — optional, but rounds out the meal
  • Olive oil spray — helps chicken brown evenly

Note: I have the Instant Vortex air fryer and Ninja Foodi air fryer. This method works with any oven-style air fryer, larger basket air fryer or Ninja Foodi grill.

You can use a smaller capacity basket air fryer, but you may have to cook the food in batches if you’re making more than 2 chicken breasts.

How to Make Chicken Breasts with Potatoes and in the Air Fryer

First, pat the chicken dry using a paper towel. Then, season the chicken, and place it in a single layer on one of the air fryer cooking racks or in the air fryer basket.

Next, spray the outside of the chicken lightly with olive oil or avocado oil. This’ll help give the chicken that gorgeous color!

Next, place the baby potatoes on the other cooking tray, and spritz with olive oil. Then, add your seasoning mix.

If you are using a basket style air fryer, you can place the chicken breast and a few potatoes together.

Cook Time

Preheat your air fryer to 390 degrees, and place the trays into the air fryer. Because the chicken breasts were on the thick side, the cook time was 25 minutes.

For thinner chicken breasts, the cook time might be 20 minutes, and thicker ones might have a longer cook time of 30 minutes. Keep in mind, both trays were full. I know a lot of you don’t bother preheating, so if you don’t, the cook time will be shorter.

Just be sure the internal temperature of the chicken is at least 165 degrees f, according to a meat thermometer.

Switch the trays about halfway through the cooking process. Or, turn the potatoes over or shake the air fryer basket so they will brown evenly.

Throw in some broccoli florets in the last 5 or 6 minutes.

We like our broccoli on the crispy side, but you can cook it longer if you prefer softer veggies.

That’s all there is to it! You can now enjoy this juicy chicken breast and potatoes dinner!

Oven Directions

Don’t have an air fryer? No problem! You can bake the chicken and potatoes on one sheet pan in your oven at 425 degrees for about 25 minutes.

Just like with the air fryer, add the broccoli during the last 5 minutes or so. Easy peasy!

Recipe Variations

Substitute boneless chicken thighs for the chicken breasts. The cook time remains the same for air fryer chicken thighs, and they are very budget friendly!

If you have larger potatoes, you can cut them into smaller pieces. Yukon gold potatoes work well here.

Use your favorite seasonings. Try a little smoked paprika, onion powder, cayenne pepper or Italian seasoning or dry ranch powder. I have even used my homemade taco seasoning a few times!

You can cut up your chicken into smaller pieces for easy serving, but cook the potatoes for 10 minutes first. Then, add the chicken, and cook for an additional 10 minutes or until chicken is done.

How to Store and Reheat

Store leftover chicken and potatoes in an airtight container or zip top bag in your refrigerator. It should keep for 3 to 4 days.

For longer storage or meal prepping, freeze leftovers in for up to 3 months for best taste.

You can reheat leftover chicken until steaming in your microwave or in the air fryer.

Pro Tips

Preheat the air fryer for best results.

Place food in a single layer, and shake the basket or rotate trays during the cooking process.

Use a meat thermometer to check internal temperature for safety.

Spritz chicken with olive oil or avocado oil cooking spray before air frying.

  • 3 boneless skinless chicken breasts
  • 1 pound baby potatoes
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • ½ teaspoon herbes de Provence
  • ½ teaspoon dried minced onion
  • ¼ teaspoon ground black pepper
  • olive oil spray
  • broccoli florets

Instructions 

  • Mix the salt, garlic powder, herbes de Provence, onions and pepper together in a small bowl
  • Pat chicken dry, and place the chicken and potatoes on air fryer cooking trays or in air fryer basket, and spritz with olive oil
  • Season the chicken and potatoes with spice mixture
  • Preheat air fryer to 390 degrees, add chicken and potatoes to air fryer, and cook for 20 to 25 minutes, rotating trays halfway through cooking cycle or shaking to ensure potatoes cook evenly
  • Add broccoli during last 5 to 6 minutes of cook time
  • Chicken should be at least 165 degrees internally, according to a meat thermometer. If you need to add time, remove potatoes and broccoli to finish cooking chicken

Notes

Recipe was made in the Instant Pot Vortex air fryer and Ninja Foodi, but can be made in any oven-style air fryer or larger basket style air fryer.
To make in smaller basket-style air fryer, you may have to cook in batches if making more than 2 chicken breasts.
