    My family loves these super easy Ritz cracker cookies! I make these no bake cookies for the kiddos when it's too hot to turn on the oven. They're easier than chocolate peanut butter bars, chocolate oatmeal cookies or Oreo cookie balls (Oreo truffles). And, they're perfect sweet treats for the holiday season, too.

    These delicious homemade sandwich cookies are basically Ritz peanut butter crackers with a rich chocolate coating. If you're craving a sweet and salty snack, whip up a batch of chocolate peanut butter Ritz crackers!

    Ingredients

    You only need 4 ingredients to make this no-bake cookie recipe:

    • Ritz crackers
    • Creamy peanut butter -- at room temperature
    • Semi sweet chocolate chips
    • Coconut oil

    You'll also need, wax paper, a plate or baking sheet, a small bowl, spoon, fork and a knife, plus sprinkles or jimmies for decorating, if you want.

    How to Make Ritz Chocolate Peanut Butter Cookies

    First, spread about a teaspoon or so of peanut butter on the inside center of each cracker. Place them peanut butter side up on a plate or baking sheet lined with wax paper or parchment paper.

    Next, top each peanut butter cracker with another Ritz cracker to make peanut butter cracker sandwiches. If the peanut butter is very soft or your kitchen is warm, I recommend refrigerating the sandwiches for about 30 minutes.

    It's not completely necessary, but if it's super soft, the peanut butter filling tends to run out of the crackers when you dip them in the hot melted chocolate.

    While the cookies are in the fridge, pour the chocolate chips into a small mixing bowl. Then, add the coconut oil.

    Heat the chocolate mixture in the microwave in 15 second increments, stirring in between, or according to package directions.

    Don't forget to scrape the side of the bowl. You can also use the double boiler method to melt chocolate chips, if you prefer.

    When the chocolate is smooth, remove the cracker sandwiches from the fridge. then, use a fork to dip each sandwich into the chocolate.

    Allow the excess chocolate to drip back into the bowl. Then, place the dipped cookie sandwiches onto the wax paper lined cookie sheet or plate.

    If you want to decorate the cookies with sprinkles or jimmies, add them before the chocolate is fully set. Then place the decorated cookies into the refrigerator to firm up.

    As soon as the cookies are firm, go ahead and have a taste! Chocolaty, buttery, sweet and salty -- what's not to love about these delicious Ritz peanut butter sandwich cookies?!

    We made just enough of these no-bake chocolate peanut butter ritz cookies for a sweet and salty snack. Perfect with a cold glass of milk!

    You can easily make a double batch or more to suit your needs. These little ritz cookies are some of our favorite treats to add to our holiday cookie tray at Christmas!

    Storage

    I recommend storing the cookies in an airtight container in the refrigerator if your house is warm. If it's cool enough, you can store them at room temperature. Otherwise the chocolate may melt.

    Variations and Tips

    You can use a different type of chocolate to make ritz peanut butter cookies. Or, try chocolate candy melts or chocolate almond bark in place of chocolate chips. You don't need coconut oil if you use these.

    In place of dark chocolate, use milk chocolate chips, white chocolate chips or almond bark. Or, use a combination of white and dark chocolate.

    Use holiday themed sprinkles during Christmas time or Valentine's Day, Halloween, Easter or any holiday.

    Ingredients
      

    • 28 Ritz crackers
    • 2 tablespoons peanut butter
    • 1 cup semi sweet chocolate chips
    • 2 teaspoons coconut oil
    • sprinkles or jimmies if desired

    Instructions
     

    • Add about ½ teaspoon of peanut butter to the center of each Ritz cracker, and gently spread into a thin layer
    • Top with another Ritz cracker, and place on a wax paper lined plate or cookie sheet
    • Refrigerate for about 30 minutes or until peanut butter is firm
    • Add the chocolate chips and coconut oil to a small microwaveable bowl. Microwave in 15 second increments or according to package directions, stirring after each time until chocolate is melted
    • Use a fork to dip each cracker sandwich into the melted chocolate, allowing excess chocolate to drip off
    • Place cookies on wax paper lined plate or cookie sheet, and add sprinkles, if using. Refrigerate until firm

    Notes

    This is for a small batch/snack. You can easily double or triple the recipe. You can also add more peanut butter to each cracker if you like.
    Store in an airtight container in the refrigerator for best results.
    Use white chocolate, almond bark or candy melts instead of chocolate chips, and leave out the coconut oil. You can omit the coconut oil if using chocolate chips, but the chocolate won't be as smooth.
