This easy homemade strawberry ice cream recipe uses simple ingredients to make a refreshing summer dessert. No ice cream maker needed!

No Churn Strawberry Ice Cream

We love making no churn ice cream. It’s so easy, and you don’t need an ice cream machine or any special appliances for this creamy homemade ice cream. My oldest daughter made this easy recipe for strawberry ice cream last summer and again for dessert on Mother’s Day this year. What a treat!

Ingredients

  • Ripe strawberries — Look for fresh strawberries that are just ripe and firm, not overripe or mushy. You will need to wash, hull and chop them into small pieces.
  • Sugar — to sweeten the mixture
  • Heavy whipping cream — not half and half or whole milk
  • Sweetened condensed milk — not evaporated milk
  • Lemon juice — helps break down the strawberries and enhances the strawberry flavor
  • Vanilla extract — adds flavor

How to Make Homemade Strawberry Ice Cream

First, heat the strawberries, sugar and lemon juice on the stove. Allow to cool, then combine one cup puree with the condensed milk in a small bowl. Beat the heavy cream with a hand mixer in a separate bowl until stiff peaks form. Gently fold the whipped cream into the strawberry mixture, and spoon into a loaf pan. Top with fresh strawberry slices, and place in the freezer until frozen — usually 4 hours or overnight.

Storage

Store the ice cream in the freezer. You can transfer it to an airtight container or cover the pan with foil. It should keep well for 2-3 weeks — if it lasts that long!

Recipe Tip

Do not break up or mash the berries while cooking so that you get small strawberry chunks in the ice cream.

You will have some leftover strawberry sauce that you can use as a topping. Only 1 cup of cooked strawberries is needed for this ice cream recipe.

Do not over-beat whipped cream. Stop once stiff peaks form for smooth and creamy ice cream.

Easy Strawberry Ice Cream

Ingredients  

  • 1 pound ripe strawberries washed, hulled and cut into bite sized pieces
  • ยฝ cup granulated sugar
  • ยผ cup lemon juice
  • 1 14 oz can sweetened condensed milk
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions 

  • Combine the cut strawberries, granulated sugar and lemon juice in a medium saucepan
  • Place over medium heat until mixture comes to a boil, gently stirring as the mixtures cooks. Do not break up or mash strawberries while cooking
  • Remove from heat and allow to cool completely
  • Measure out 1 cup of the cooked strawberries mixture for the ice cream, and set aside any extras to use as a topping
  • Add 1 cup of cooked strawberries and sweetened condensed milk to a large mixing bowl. Mix with a spatula until fully combined and set aside
  • In a separate large mixing bowl, add heavy whipping cream and beat with a handheld mixer until stiff peaks form.
  • Mix in vanilla extract
  • Gently fold whipped cream into the sweetened condensed milk and strawberry sauce mixture until fully combined
  • Evenly pour mixture into a loaf pan or freezer safe container
  • Top with extra strawberry slices, if desired, and freeze for 4-6 hours or overnight until solid
