Crock Pot Corn Casserole is an easy slow cooker recipe for corn pudding made with Jiffy Mix. An easy side dish for the holiday season and a great way to save oven space!

Crock Pot Corn Casserole Recipe

Easy corn casserole recipe or corn pudding or cornbread casserole is one of our favorite holiday side dishes. It is a super easy recipe that pairs well with just about any main dish.

We make this easy slow cooker corn pudding at Thanksgiving dinner, Christmas dinner and Easter. With just a few minutes of prep time and lots of sweet corn flavor, it’s the perfect side dish for any family dinner, potluck or special occasion.

This slow cooker version of the classic recipe is a great option when you are preparing holiday meals with a lot of side dishes and not a lot of oven space. Just mix, pour and cook!

Ingredients

You only need a few simple ingredients to make Jiffy corn casserole in the slow cooker. They should be easy to find in your grocery store. Full amounts are in the printable recipe card below.

  • Jiffy corn muffin mix — You will need 2 boxes of this mix for this crockpot recipe.
  • Canned cream style corn — or creamed corn
  • Canned whole kernel corn — you can use frozen corn.
  • Sour cream — full fat sour cream or light is fine.
  • Butter — either salted butter or unsalted butter works.
  • Seasonings — sea salt, black pepper, garlic powder, onion powder for flavor

How to Make Crockpot Corn Casserole Recipe

First spray a 6-7 quart slow cooker with nonstick cooking spray. Then, melt the butter in a small bowl, and drain the cans of whole kernel corn.

Add the melted butter and all remaining ingredients to a large mixing bowl. Mix with a spatula or large spoon until the ingredients are well combined.

Next, spoon the corn mixture into the slow cooker. Then, spread the mixture evenly in the crockpot.

If you want to add cheese to this slow cooker corn casserole, you can do this in the last half hour of cooking.

Cooking Time

Cook the casserole for 2-3 hours on high or 4-6 hours on low. Exact cook time will vary with different brands and models of slow cookers. I used the high setting in my 7 quart crockpot, and it was done in 2 hours.

Recipe Variations and Tips

I kept this slow cooker casserole plain, but sometimes, I add cheddar cheese, green chiles, cumin and paprika for a Southwestern version.

My baked casserole has eggs, but the crockpot version doesn’t, for more of a pudding consistency. Just scoop it out with a serving spoon when you are ready to serve.

You can add a clean kitchen towel or paper towels underneath the lid to catch any condensation that may drip on top of the casserole.

How to Store and Reheat Leftovers

Refrigerate leftover crockpot Jiffy corn casserole in an airtight container for 3-4 days. You can reheat smaller portions in the microwave and larger portions in the oven or slow cooker. This casserole can be frozen in a freezer bag or freezer-safe container and thawed in the refrigerator before reheating.

Ingredients  

  • ½ cup butter 1 stick
  • 2 boxes Jiffy corn muffin mix
  • 2 14.75-oz cans creamed corn
  • 2 15.25-oz cans whole kernel corn drained
  • 1 cup sour cream
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • ½ teaspoon onion powder

Instructions 

  • Spray a 6-7 quart slow cooker with non stick spray
  • Melt butter in a small bowl
  • Add all ingredients to a large mixing bowl, and stir until well combined
  • Pour corn mixture into slow cooker, spread evenly with spatula, and add lid
  • Cook for 2-3 hours on high or 4-6 hours on low

Notes

Cooking times may vary with brands and models of slow cookers. Casserole should be 160 degrees F when done.
For a cheesy casserole, add shredded cheddar cheese or cheddar blend to the top of the casserole the last half hour of cooking.
