We had a large ham for Christmas, and after the holidays, we had a ton of leftover ham to use up. We’re talking ham and eggs, ham sandwiches, pasta and ham, and well, you get the idea. My kids were not thrilled with the ham and eggs, but our family’s favorite dish from those holiday leftovers was definitely this Easy Cheesy Scalloped Potatoes and Ham. And even though we’re well into January now, my cheese-loving husband thought I should share the recipe.
Actually, you could use deli ham or any precooked meat in this dish. The casserole is loaded with cheese, and it definitely falls under the category of comfort food, so it’s great for those cold nights when you’re craving a hearty meal. And while it’s not low on carbs or calories, you only need a small portion to feel satisfied. Plus, it’s a perfect make-ahead meal.
I took a shortcut with the scalloped potatoes, and I used jarred Alfredo sauce. But the good thing about that is that it saves time, and you can use whatever brand works for you. Really, the most time-consuming part of the whole dish is slicing the potatoes, but I scrubbed them well and left the skins on, so it didn’t take too long.
- 4 to 5 large potatoes, washed and sliced thin
- 2 cups sliced cooked ham
- 1 jar of Alfredo sauce
- 2 cups shredded cheddar cheese
- 1 tablespoon Italian seasoning
- Olive oil
Preheat oven to 350 degrees.
Add some olive oil to the bottom of a 13X9-inch baking dish.
Layer the potatoes, ham, cheese and seasoning.
Add some of the Alfredo sauce and spread over the cheese.
Repeat the layers, and top with remaining Alfredo sauce. You can also add more cheese to the top.
Bake for about one hour or until the potatoes are cooked and the dish is bubbling.
If the sauce seems too thick, you can add some water or milk to thin it down. If you want a really rich casserole, you could even dot the potatoes with a little bit of butter — you get the idea. And, if you’re short on time, you can microwave the casserole to get the potatoes nice and soft and then finish it in the oven.
I like to serve scalloped potatoes and ham with a side of salad, just to keep some freshness in the meal and to make me feel better about indulging in such a rich dish. But then again, we don’t have this often, so it’s all good!
