S’more’s cookie bars have a chocolate chip cookie bar base topped with gooey marshmallows, milk chocolate candy and graham cracker pieces. A delicious dessert for summer or anytime you want a crowd-pleasing treat!
The Ultimate S’mores Bars
When it comes to easy dessert recipes, you can’t go wrong with s’mores. My family loves these gooey chocolate marshmallow treats, and I have several variations, from ice cream to a super easy dip, plus brownies and cookies. But, this easy recipe for s’mores cookie bars may just be our new family favorite.
This simple dessert is surprisingly easy to make, which is a good thing because they do not last long at all! We just took our favorite chocolate chip cookie bar recipe and added a s’mores layer on top. So delicious!
Ingredient Notes
Here’s what you need to make the bars. Full amounts are in the printable recipe card below.
- Butter — I always use salted butter, but unsalted butter is fine
- Brown sugar and white sugar — the base of the bars
- Vanilla extract — for flavor
- Flour — all purpose
- Baking powder — a leavening agent
- Salt — counters the sweetness
- Cinnamon — optional, but enhances the flavor
- Chocolate morsels — I use semi-sweet chocolate chips
- Large marshmallows — I like the way the larger ones look, but you will need to cut them in half so they melt evenly. You can also use mini marshmallows.
- Graham crackers — broken into pieces
- Chocolate bars — Hershey bars or your favorite kind of chocolate
How to Make S’mores Cookie Bars
First, you mix the cookie dough ingredients to form the base. Then, you spread the dough into a baking pan, using a spatula, and bake it in the oven. Next, add the marshmallows and bake until golden brown. Finally, top the bars with graham crackers and chocolate bar pieces. Allow the bars to cool a bit before slicing.
Storage
Store the sliced cookie bars in an airtight container at room temperature. No need to refrigerate them unless your house is very warm. They should stay fresh for about 4-5 days — if they last! For longer storage, you can freeze the bars in a freezer bag for up to 3 months.
Recipe Tips
Line the baking pan with parchment paper so you can easily remove and cut the cookie bars
Do not over bake. The bars are done when they are a light golden brown, and the edges are firm. The center will be soft, but it will firm up as it cools down.
For clean slices, wipe the knife with a wet paper towel after each slice.
S’mores Cookie Bars
Ingredients
- ยฝ cup butter
- 1ยฝ cups brown sugar
- ยฝ cup white sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon sea salt
- 1 cup semi sweet chocolate chips
- 12 oz bag large marshmallows cut in half
- 2 milk chocolate candy bars cut into small pieces
- 8 graham crackers broken into small pieces
Instructions
- Preheat oven to 350โ
- Line a 9×13 baking pan with parchment paper, or use butter or cooking spray to grease pan
- Melt the butter in a large mixing bowl in the microwave
- Add brown sugar and white sugar, and mix until fully combined
- Mix in the ground cinnamon and vanilla extract
- Add the eggs, and beat until fully combined
- Gradually add the flour, one cup at a time, and mix well. Mix in the baking powder and sea salt
- Fold in the chocolate chips, and transfer cookie dough mixture into prepared baking pan
- Bake for 20 minutes, or until cookie bars are a light golden brown, and a toothpick inserted in the center comes out fairly clean
- Remove from oven, evenly place the halved marshmallows over baked cookie bars, and return to oven and broil for 2 minutes or until marshmallows are golden brown
- Remove from over, allow to cool slightly, and top with chocolate bar bits and graham cracker pieces
- Allow to cool completely before serving
