Hi friends! It’s been absolutely positively hot here lately — we’re talking triple digits — and when it comes to summer cooking, I’m all about meals that are light, fresh and very quick and easy to make. And I definitely want to stay as far away from the oven as possible!
We’ve been having a lot of salads lately, and it was definitely time to try something new. So I made these Southwest Chicken Wraps with Avocado Buttermilk Dressing, and not only were they super easy, but they were also incredibly delicious! Best of all, I didn’t use the oven or the grill!
The other day, we had a high of about 116 degrees, which isn’t that unusual in summer around here, but I still don’t think you ever really get used to it. And no matter where you are, hot summer days can easily zap your enthusiasm for cooking.
So the kids and I were hanging out in the very comfortable frozen food section of our local Walmart, and while they were drooling over the ice cream, I spied these new Tyson Grilled and Ready Chicken Breast Fillets. That gave me an idea for a quick and easy dinner, and I also picked up a couple packages of Birds Eye Steamfresh Southwest Style Protein Blends to go with the chicken.
My kids love burritos and wraps. They’ll even eat peanut butter and jelly wraps! So even though a chicken burrito bowl would have been great, I liked the idea of serving a high-protein chicken and veggie wrap. It just cools the meal down a little, which makes it perfect for summer. And the tangy avocado buttermilk dressing is a nice accompaniment.
Here’s the amazing part: Both the chicken and the Protein Blend can be prepared in the microwave! And honestly, the chicken does not taste like microwaved chicken! It’s all natural and all white meat, which is a must for my picky eaters!
Just follow the directions on the packages to prepare the chicken and the Protein Blends. It took about five minutes for the chicken and five for the Southwest blend, so you’re looking at a total of 10 minutes for the main ingredients. Really.
And the dressing is a cinch to make, as well.
Ingredients for Avocado Buttermilk Dressing
- 1 large avocado
- 2 1/2 cups buttermilk
- 1 cup chopped cilantro
- 1/2 a jalapeno pepper, seeded and diced
- Juice of 1 lime
- 1/2 teaspoon Italian seasoning
- Salt and pepper, to taste
Cut avocado in half, remove seed, and scoop out ingredients.
Add avocado, cilantro, jalapeno, lime juice and buttermilk to a blender and puree until smooth.
Add the Italian seasoning, along with the salt and pepper, and blend until fully incorporated.
Store in refrigerator until ready to serve.
I used spinach tortillas for a slightly different taste. I also added fresh spinach and slices of pepper Jack cheese. To assemble the wraps, I spooned some of the Protein Blend on the tortilla, added sliced chicken, spinach and cheese and topped it off with the avocado dressing. How fresh is that?!
The Southwest style blend is a mix of corn, black beans, lentils, red peppers and whole grains, combined with a tasty sauce. And the chicken looks and tastes like it came right off the grill, except you don’t work up a sweat while you cook it!
The entire meal took less than a half an hour to prepare, and that’s a plus for me anytime! And, it’s packed with protein, so it’s perfect for busy days or a even a quick lunch at the office.
I think I’ll be stocking up on these ingredients so that we always have the fixings for a quick and easy, protein-packed meal on hand. Not only are they good for summer, but they would also be handy for those hectic first days back at school. Especially when it’s still hot out!
