When I was looking back at my early posts, I saw that I shared a picture of my family’s favorite meatloaf, but I never shared the actual recipe. This is mostly due to the fact that I didn’t have an exact recipe. My mom showed me how to make her recipe a long time ago, and of course, I tweaked it to suit my family’s taste. But like most family recipes, I never wrote the ingredients down, and it was mostly a little bit of this and a little bit of that — until now.
I made my Cheesy Barbecue Meatloaf the other day, and this time, I made sure to actually measure everything. After all, why have a blog called Meatloaf and Melodrama if you don’t have a recipe for meatloaf?
I have several versions of this recipe, but this is my family’s favorite. It combines a tangy barbecue flavor for the spice lovers with plenty of cheesy goodness for the cheese fanatics in the crowd. In short, this makes everyone happy — for one night, at least!
- 2 pounds ground beef
- 3 tablespoons of your favorite barbecue sauce
- 1 egg
- 1 tablespoon Dijon mustard
- 1 tablespoon dried minced onions
- 1 teaspoon Italian seasoning
- 1 tablespoon grated Parmesan cheese
- Salt and pepper, to taste
I use Parmesan cheese in place of bread crumbs, and I’ve never had any problems getting the loaf to stick. I also think this helps the loaf stay moist. The kids love having mashed potatoes with meatloaf, and this time, I used leftover cheddar potatoes from our Christmas Pierogi. But, any sides will do!
