Easy Chicken Stuffing Crockpot Recipe

This easy Crock Pot chicken with Stove Top Stuffing is perfect when you’re craving comfort food. It’s such an easy recipe with minimal prep and very budget friendly. Just layer the ingredients in your slow cooker, and enjoy a warm and satisfying meal a few hours later!

Chicken stuffing bake is a classic my family loves during sweater weather. But, this slow cooker recipe makes a delicious family dinner any time of the year. This easy chicken dinner is also a great recipe for a simple holiday dinner or small Thanksgiving dinner.

Ingredients

You only need a handful of ingredients for this slow cooker chicken recipe. You can also add extra flavors and customize the basic recipe to suit your own tastes! Here’s a quick overview of what you need. Full amounts are in the printable recipe card below.

  • Chicken breasts — boneless skinless chicken breasts
  • Seasonings — ground black pepper, garlic powder and dried onions
  • Sour cream — mix with condensed soup to form the creamy sauce
  • Stuffing Mix — I use Stove Top Stuffing mix – dry stuffing mix (chicken flavor). Don’t make the stuffing, just sprinkle the dry mix over the chicken.
  • Cream of chicken soup — or cream of celery soup
  • Chicken broth — or water to help make gravy
  • Butter

How to Make Slow Cooker Chicken Stuffing Casserole

Step 1. Add a little oil or use a non stick spray to coat your Crock-Pot. Then, place the chicken breasts in the bottom of the slow cooker, add chicken broth, and season chicken breasts.

I used a mixture of black pepper, garlic powder and dried onions. You can also use your favorite poultry seasoning blend here.

Add salt, to taste, if you like. The first time I made this easy slow cooker chicken, I added salt, but the next time, I left it out and let people salt their food if they wanted to.

Step 2. Spread the cream soup and sour cream evenly over the chicken. I used cream of celery this time, but you can use cream of chicken or cream of mushroom soup.

Next, pour the chicken broth around the chicken. This will help make the gravy, especially if your chicken does not release a lot of liquid.

Step 3. Next, sprinkle the dry stuffing mix on top of the chicken. Place pats of butter on top of stuffing. You don’t need to add liquid to your stuffing mix since condensation from slow cooking will cook the dry breadcrumbs.

This time, I added chopped celery and dried cranberries to jazz up the recipe since I use them whenever I make homemade stuffing for Thanksgiving.

Cooking Time

Step 4. Cover, and cook on high for 2 to 3 hours or low for 6 to 8 hours. The total cooking time will depend on how thick the chicken breasts are and the make and model of your slow cooker. I used 4 thin chicken breasts here, about 2 pounds. So, they were done in 2 hours.

Recipe Tip

For firmer stuffing, remove lid 30 minutes before serving to allow moisture to evaporate. Or, place dry paper towel or kitchen towel between the lid and the slow cooker to absorb moisture 30 minutes before serving.

What to Serve with this Chicken and Stuffing Crockpot Dinner

You can’t go wrong with a side of green beans with this delicious crockpot chicken and dressing. If you’re not adding green beans in the slow cooker or mixed veggies, you can microwave green beans or cauliflower or broccoli on the side.

For a holiday meal, serve cranberry sauce or Instant Pot corn casserole and mashed potatoes to round out this delicious dinner.

Storage

Refrigerate leftover chicken with stuffing in an airtight container. It will keep for up to 4 days. You can freeze leftovers for up to 3 months for best taste. Reheat chicken with stuffing in your microwave if reheating an individual portion. You can also heat leftovers in your oven.

Variations

To make slow cooker Thanksgiving chicken, add diced celery and dried cranberries — Craisins — to the stuffing. You can also use homemade stuffing instead of a mix.

Add fresh or frozen green beans on top of the chicken for a complete meal. I don’t recommend using canned green beans, as they will overcook.

You can substitute chicken thighs or chicken tenders for the chicken breasts. For an extra creamy sauce, use 2 cans of cream of chicken soup or celery soup.

Ingredients  

  • 1 tablespoon olive oil or cooking spray
  • 4 boneless skinless chicken breasts about 2 pounds
  • ½ cup low sodium chicken broth
  • 1 tablespoon dried minced onions
  • 1 teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • 1 10 ounce can cream of chicken soup or cream of celery soup
  • ½ cup sour cream
  • 1 package Stove Top Stuffing Mix 6 oz
  • 4 tablespoons butter
  • 2 stalks celery diced, optional
  • ½ cup dried cranberries optional

Instructions 

  • Add olive oil and chicken breasts to slow cooker, add chicken broth, and season with pepper, garlic powder and dried minced onions

If stuffing seems to0 dry or for wetter stuffing, add 1/2 cup of chicken broth over stuffing.
Total cook time depends on how thick chicken is and how fast your slow cooker cooks. Chicken is done at 165 degrees.
