Dipped Mint Chocolate Chip Ice Cream Sandwiches are festive, fun and amazingly easy to make. These minty frozen treats are perfect for spring!
In my house, ice cream rules! With seven people in the family, it can be challenging to find a dessert that everyone likes, but I never hear any complaints when I suggest having ice cream. And, if I really want to feel like the Best Mom Ever, I just make some ice cream sandwiches. My kids are crazy about these frozen treats, and I have to admit that I am too.
They remind me of warm weather, vacation and good times. My parents would always let me get ice cream sandwiches from the hotel vending machines whenever we went on vacation, and when my own kids came along, I started making my own.
Making your own ice cream sandwiches is cheaper than buying them, especially if you’re feeding a crowd. Plus, you can go all out with your favorite toppings and anything else that you want to add.
We stopped at Walmart the other night to pick up a few things, and the kids found a huge display of Blue Bunny® Ice Cream in the frozen food section. The ice cream has new packaging that is clear and lets you see exactly what you’re getting — gorgeous flavor swirls and all!
I think this helped the kids decide on the flavors they wanted in record time!
Since it’s practically spring, and the weather is warming up here, I thought it would be the perfect time to make ice cream sandwiches.
The kids ultimately chose Blue Bunny® Mint Chocolate Chip and the Blue Bunny® Cherrific Cheesecake — yum! Since mint goes so well with chocolate, I decided to make soft chocolate cookies and use that as the filling for dipped mint chocolate chip ice cream sandwiches.
But before we put away the groceries, we couldn’t resist sampling a little bit of both flavors!
Soft cookies work best for ice cream sandwiches. You don’t want to have to gnaw on a hard frozen cookie! So, I used chocolate cake mix to make the cookies. Cake mix cookies stay soft and chewy, so they’re perfect for this recipe. Plus, they are super easy to make.
When they were cool, I set aside 12 cookies and added a generous scoop of ice cream to the bottoms of six cookies.
Then, I gently topped the ice cream with the remaining cookies.
To make these sandwiches extra special, I dipped them into a little bit of melted chocolate and added a few candy sprinkles.
Now that’s an ice cream sandwich!
How to Make Dipped Mint Chocolate Chip Ice Cream Sandwiches
Dipped Mint Chocolate Chip Ice Cream Sandwiches
- For the Cookies
- 1 box chocolate cake mix
- 2 eggs
- 1/3 cup coconut oil
- 2 teaspoons milk
- For the Sandwiches
- 12 chocolate cake mix cookies
- 6 scoops Blue Bunny® Mint Chocolate Chip Ice Cream
- 1 cup semi sweet chocolate chips
- 2 tablespoons butter
- Candy sprinkles
- For the Cookies
- Mix all ingredients in a large mixing bowl
- Scoop tablespoon-sized balls of dough and place on ungreased cookie sheet
- Bake at 350 degrees for 8 to 10 min
- allow to cool completely
- For the Sandwiches
- Assemble sandwiches, and place in freezer for about 10 minutes to firm up
- Melt chocolate chips and butter in microwave for 30 seconds, and stir
- Melt for additional 10 seconds until fully melted and glossy
- Dip half of each sandwich into melted chocolate
- Top with candy sprinkles, and store in freezer until ready to eat
The cookie recipe makes about 30 cookies, and I saved the extras for later. I only made enough dipped mint chocolate ice cream sandwiches for one night, but you can make as many as you want.
If you want to make this dessert even easier, you can always buy the cookies, but I highly recommend making them!
