Mint Chocolate Chip Cookie Ice Cream Sandwiches made with soft and chewy cake mix cookies are perfect for an easy make ahead frozen summer dessert!

In my house, ice cream rules! With seven people in the family, it can be challenging to find a dessert that everyone likes, but I never hear any complaints when I suggest having ice cream.

And, if I really want to feel like the Best Mom Ever, I just make some cookie ice cream sandwiches. My kids are crazy about these frozen treats, and I have to admit that I am too. 

Making your own ice cream sandwiches with freshly baked cookies is cheaper than buying them, especially if you’re feeding a crowd. Plus, you can go all out with your favorite toppings and anything else that you want to add.

How to Make Homemade Cookie Ice Cream Sandwiches

Soft cookies work best for ice cream sandwiches. You don’t want to have to gnaw on a hard frozen cookie! So, I made chocolate cake mix cookies.

Cake mix cookies stay soft and chewy, so they’re perfect for this recipe. Plus, they are super easy to make. Homemade Double Chocolate Chip Cookies work well, too.

When they were cool, I set aside 12 cookies. Then, I added a generous scoop of mint chocolate chip ice cream to the bottoms of six cookies.

Next, gently top the ice cream with another cookie. Press down until the ice cream moves toward the edges.

Then, repeat the process until you’re done. You can stop there. Or, you can make these ice cream sandwich cookies even better!

To make these sandwiches extra special, I dipped them into a little bit of melted chocolate and added a few candy sprinkles.

Now that’s an ice cream sandwich! You can also use magic shell topping if that’s easier.

Pop the cookie sandwiches into the freezer to firm up until you’re ready to eat. Or, wrap them in freezer paper or plastic wrap and enjoy for later.

Flavor Variations

You can use any ice cream and any flavor cookie. So, the flavor possibilities are pretty much endless here.

The cookie recipe makes about 30 cookies, and I saved the extras for later.  I only made enough dipped mint chocolate ice cream sandwiches for one night, but you can make as many as you want.

Mint Chocolate Chip Cookie Ice Cream Sandwiches

Ingredients  

For the Cookies

  • 1 box chocolate cake mix
  • 2 eggs
  • cup coconut oil or vegetable oil or melted butter
  • 2 teaspoons milk

For the Cookie Ice Cream Sandwiches

  • 12 chocolate cake mix cookies
  • 6 scoops Mint Chocolate Chip Ice Cream
  • 1 cup semi sweet chocolate chips
  • 2 tablespoons butter
  • Candy sprinkles

Instructions 

  • For the Cookies
  • Mix all ingredients in a large mixing bowl
  • Scoop tablespoon-sized balls of dough and place on ungreased cookie sheet
  • Bake at 350 degrees for 8 to 10 min
  • allow to cool completely
  • For the Sandwiches
  • Assemble sandwiches, and place in freezer for about 10 minutes to firm up
  • Melt chocolate chips and butter in microwave for 30 seconds, and stir
  • Melt for additional 10 seconds until fully melted and glossy
  • Dip half of each sandwich into melted chocolate
  • Top with candy sprinkles, and store in freezer until ready to eat

Notes

Dipped cookies are optional. You can serve cookie sandwiches as is or use magic shell topping for easier dipping.
Wrap cookie sandwiches in freezer paper or plastic wrap for longer storage.
